I don’t remember the exact date I met Marty for the first time. Like a lot of people who want to get through a checkout line, I found my thoughts on speed, nothing more. The line I was standing in wasn’t moving as quickly as I wanted, and I glanced toward the cashier, who was receiving money from customers.
He was an old man in his sixties. I thought, well, it probably took him a little longer to get the jobs done. For the next few minutes I watched him. He greeted every customer before he began scanning the goods they were purchasing. Sure, his words were the usual, “How’s it going ” But he did something different—he actually listened to people. Then he would respond to what they had said and talk with them briefly.
I thought it was strange, but I guessed I had grown accustomed to people asking me how I was doing simply out of a conversation without thinking. Usually, after a while, you don’t give any thought to the question and just say something back quietly.
This old cashier seemed sincere about wanting to know how people were feeling. Meanwhile, the high-tech cash register rang up their purchases and he announced what they owed. When customers handed money to him, he pushed the appropriate keys, the cash drawer popped open, and he counted out their change.
Then magic happened.
He placed the change in his left hand, walked around the counter to the customers, and extended his right hand in an act of friendship. As their hands met, the old cashier looked the customers in the eyes. “I want to thank you for shopping here today,” he told them. “You have a great day. Bye-bye.” The looks on the faces of the customers were priceless.
Now it was my turn. I glanced down at the name tag on his red waistcoat, the kind experienced Wal-Mart cashier wore. It read, “Marty.”

Over the years, Brian Wansink, director of the Food and Brand Lab at Cornell University, has studied such things as how far Americans typically drive to buy food, how many times we refill our plates at all-you-can-eat buffets and how we organize our kitchens. In the mid-2000s he famously coined the phrase “mindless eating” (and wrote a book by that name) to focus attention on all the bad dietary decisions we make without really thinking about them.
His new book, Slim by Design: Mindless Eating Solutions for Everyday Life, aims to change the design of restaurants, school lunchrooms, office cafeterias and homes so that the mindless choices we make will be more healthful ones. Some examples:
Keep kitchen counters clear. No visible snack food, no bread, no nuts — not even breakfast cereal. In Wansink’s research, “women who had even one box of breakfast cereal that was visible — anywhere in their kitchen — weighed 21 pounds more than their neighbor who didn’t.”
Trick yourself into drinking less wine. “We tend to focus on the height of what we pour and not the width, so we pour 12 percent less wine into taller wineglasses than we pour into wider wineglasses.” And the shape of the glass is not the only variable that affects how much we drink. Wansink writes: “Because red wine is easier to see than white wine, we pour 9 percent less red wine whenever we pour a glass.”
Wansink said his researchers also found that people ate less at restaurants when sitting in well-lighted areas near windows and doors, than in darker areas or in the back. They ate less if they were offered a doggie bag, or to-go box, before they got their meals: apparently the idea of getting a “free” second meal outweighed the impulse (冲动) to clean their plates. Workers who frequently ate at their desks weighed 15.4 pounds less, on average, than those who didn’t. Fruits and vegetables kept on the top shelf of the refrigerator were eaten at higher rates than those on lower shelves.
The point, Wansink says, is to consider findings like those and change your environment or habits. Then you won’t have to think about it: You’ll just eat less.

Robots that can cook are in growing demand(需求)in the United States. The increased demand comes at a time when restaurants are trying to put some distance between their workers and customers during the COVID-19.
In a few weeks, White Castle restaurants will test a robot arm that can cook French fries and other foods. The robot, called Flippy, is a product of Miso Robotics, a company based in Pasadena, California.
Robot food service was becoming popular even before the coronavirus pandemic(冠状病毒). Hospitals, college dining areas and other places tried to meet demand for food while keeping labor costs low. Robot chefs appeared at places like Creator, a restaurant in San Francisco. Now, some say, robots may become necessary for the food service industry. "I expect in the next two years you will see much more robotic adoption(采纳)in the food space because of COVID-19," Jain said.
Some peoples say, robots can lower the demand for labor. At the University of Arkansas for Medical Sciences in Little Rock, cafe workers used to spend six hours per day making salads, notes Tonya Johnson, the school's director of nutrition services. But two years ago, the university added a Sally, a kind of robot that now makes around 40 salads per day. By adding Sally, the school was able to cut a job opening in its cooking staff, Johnson said. "I think the pandemic has made us realize how much we need more equipment like Sally," Johnson said.
Miso Robotics co-founder and chief Buck Jordan said fast food restaurants are already having trouble finding workers, partly as a result of a losing population of young workers. Jordan added that his company's position is that "automation(自动化)is not a choice". He added, "You must automate in order to survive in the future."

Over the years, Brian Wansink, director of the Food and Brand Lab at Cornell University, has studied such things as how far Americans typically drive to buy food, how many times we refill our plates at all-you-can-eat buffets and how we organize our kitchens.
