米线是将大米经过发酵、磨浆、澄滤、蒸粉、挤压、煮制等工序而制成的一种线状食品，烹饪方法可以有凉、烫、卤、炒等。
米线有多种吃法，是我国云南一带的风味美食。

云南米线按其制作方法可以分为两大类，一类是利用传统手段将大米发酵后磨制而成的“酸浆米线”；另一类是将碾磨的米粉利用米线制作机器糊化成型，称作“干浆米线”。后者经过烘干、晾晒手段即制成便于携带贮藏的“干米线，”待食用时再涨发蒸煮。干浆米线筋骨硬、线长，但香味不及酸浆米线。
