How to plan for your own restaurant
In groups, discuss these questions.
What kind of restaurant will it be, e.g. fine dining, casual family, or fast food
What kind of cuisine will you serve
Who will be your customers
How much will you charge
Where will the restaurant be
located

Design your own restaurant
decide on the dishes to be served and the chef to be employed
design the menu in both English and Chinese
design the kitchen
design the dining area and decorations
give the restaurant a name and design advertising materials for it
Divide the following tasks within your group:
Enjoy the short video and see if it can inspire you something in your design or decoration of the dinning area.
work as a manager to help everyone coordinate their ideas and activities
Now pull everything together to make a presentation to the class, where the key aspects of the restaurant will be explained by the different members of the group.

Our restaurant is called “The Big Kahuna”. It is a casual restaurant that features traditional Hawaiian cooking and Asian fusion.
The style of our restaurant is modern, with lightly- coloured, resort style furnishings and bright, tropical accents and floral patterns.
The target customers will be young couples, families, and groups of friends enjoying casual settings overlooking the beach.
We will have indoor and outdoor tables and sofas so that customers can sit comfortably in all kinds of weather. We plan to hold events every season to enjoy luaus, barbecue parties, and weddings on the beach.
The special Hawaiian “Breakfast All Day” set features a range of Hawaiian pancakes, and the standard breakfast sets for three to five dollars. Lunches range from 5 to 12 dollars for Spam sandwiches, seafood and fruit salads, California rolls, and sushi wraps.
Dinner entrees cost from 8 to 35 dollars, depending on portion size, and include barbecued pork, chicken, as well as side dishes portioned for couples.
We’ll wear bright T-shirts, tennis whites, and sneakers. And play Hawaiian and Asian music.
