The Story of Chinese Dumplings
Jiaozi (Chinese dumpling) is a traditional Chinese food—one of the most widely favorite foods in
northern China long long ago. It looks like a horn(号角).
When the Chinese people eat dumplings with meat and vegetables in it at the end of the old year and the beginning of the New Year, it is right between eleven pm and one am. For this time is called jiaozi (交子) in Chinese, the dumplings people eat during this time and they named because of it. Later it became jiaozi (饺子).
In the Han dynasty (206 BC-220 AD) eating dumplings became a custom in the capital city of Chang'an (present-day Xi'an in Shanxi Province).
People believed that eating dumplings on New Year’s Eve brings good luck and happiness. Later, when people got married or gave birth to a child, they usually treated their guests with Chinese dumplings.
There are two main kinds of dumplings: those with vegetables and those with meat filling. When making dumplings for New Year's Eve, people may put a coin in one of the dumplings. If someone finds the coin at dinner, he or she will have good luck in the New Year.When you eat dumplings, you will also eat together with other things such as vinegar(醋), garlic(大蒜), soup and so on.

First, make the filling. You can choose your favorite meat, chop it up and mix it with chopped vegetables. Meanwhile you should put in salt, soy sauce, pepper, etc. to get your favorite flavor. Stir the ingredients in a container.
Second, make the dough. You should put some flour in a container, pour water hit by bit, stir it so as to make it sticky.
This is the dough.
After that you should cut the dough into small pieces.
You press each piece with your hand slightly and then roll it with a rolling pin into a round piece.
