Smashed cucumber(拍黄瓜) salad is one of the most popular cold dishes in China. You can find the green dish anywhere from restaurants to homes. 1
According to The New York Times, smashed cucumber salad is “everywhere” in New York. Some restaurants have even added the dish to their menus. 2 But American cooks are trying yogurt, honey, lemon and other common western ingredients.
Why is this dish becoming so popular 3 Smashed cucumbers can hold onto tastes more than cucumbers which are cut into fixed shape and size. “Just changing the way you break down an ingredient…changes the way it feels and tastes. It’s cool,” said Danny Bowien, a cook at a New York restaurant.
4 The cook smashes fresh cucumbers with the flat side of a knife. 5 Then other ingredients can be added. Also, it takes only five minutes to make the salad. Cook Julia Goldberg said it’s really “satisfying”.
The success of smashed cucumbers salad abroad shows that we should try to fit into local conditions when spreading Chinese culture across the world, said The Beijing News.
A. This summer, even Americans are trying it. B. Most people like the special taste it produces. C. The way the dish is prepared also draws people’s attention. D. The strong smash makes the cucumbers different shapes and sizes. E. Americans have expressed their opinions on the taste of this salad. F. In China, people use garlic (蒜), vinegar (醋) and oil to make the cucumber tastier.
Section B(2a-2e)
一、阅读理解
In the eyes of many foreigners, Chinese are the best hosts (主人) and the worst guests in the world. They’re not really bad guests, but because the guest-host relationship in China is much different than in some western countries, it appears they are not nice guests. And western hosts sometimes look rude (粗鲁的) in the eyes of Chinese guests.
In China, guests are almost like gods. Whenever I enter a Chinese person’s home, there is always fruit on the table for me, and someone is quick to bring me a cup of tea or water. In the west, generally the guest is not a god. Acting according to the host’s way of doing things is usual behavior for a guest.
My wife’s mother, a very kind elderly Chinese lady, doesn’t smoke. When I see some of her guests smoking in her house, as a non-smoker, I feel unhappy. Usually I want to stop them directly, but I must realize that in China, to be a good host, she must not do that. In most North American homes, if you are a guest, and the hosts are not smokers, you should not smoke in their house. At the very least, you could ask, “Is it OK if I smoke ” But, don’t be surprised if they say, “No, you can’t smoke.” In our culture, if you smoke in their home, you are a bad guest, but if they do not allow you to smoke in their house, they are not a rude host.
Guests in China also have special habits. Some western people may not adapt to these habits very soon. Thankfully my wife is Chinese, so whenever we visit a Chinese family she tells me to buy them a gift. However, giving a gift to a host is not always necessary in my country. So, if you invite international guests to your house, don’t be too surprised if they don’t bring you a gift.
In China, you probably won’t need to change the guest-host relationship very much because you will probably only be the host, and Chinese are naturally very good hosts. If western hosts invite you to their house, try not to be too surprised if their style of treating you is not what you have expected.
1. Many foreigners think that Chinese hosts are the _________ in the world.
A. best B. worst C. most natural D. most different
2. When a western guest visits a Chinese family, he often _________.
A. buys some fruit B. feels like a god
C. wants some gifts D. takes a cup of tea
3. If the writer’s guests want to smoke in his house, what will he probably say
A. It’s OK if you smoke here. B. Let’s smoke together.
C. Sorry, you can’t smoke here. D. Smoking is a bad habit.
4. What is the meaning of the underlined phrase “adapt to” in the passage
A. think back to B. get used to C. look forward to D. keep close to
5. What is the main idea of this passage
A. Foreigners should learn from Chinese.
B. Hosts must do things in the guests’ way.
C. Western hosts are always nice to guests.
D. People should understand cultural differences.

Be a student with good manners
It’s very important to be a person with good manners in our daily life.
Last Saturday evening, all my family were enjoying dinner in a restaurant when a group of young people came into it. While they were eating their food, they talked loudly and smoked. I tried to stop them doing so, but they refused to listen to me. Instead, they said it was none of my business and laughed at me.
In fact, what they did upset me deeply, but I was proud of what I did. In my opinion, we should keep quiet in public. Also, we should be polite to others. Only in this way can we be trained to be persons with good manners.

When in China,do as the Chinese do!
Meals in China are different in some ways from meals in the West. In China, lunch is usually served around 12 o'clock. As for dinner,Chinese people eat it much earlier than people in the West. Chopsticks are used to eat most food. Generally, for dinner, there'll be lots of different dishes, not just three courses. Besides,Chinese people like to talk about food,so it's a good topic during a meal.
What's more, you are supposed to start after the old start to eat while eating with the old. It's impolite to point at anyone with the chopsticks. The golden rule is:When you're in China, watch the Chinese and do as they do!
