People who do not get enough vitamin C may feel tired. Their legs may hurt. Their gums (牙龈) may begin to bleed and even fall out. These are the symptoms of scurvy (坏血病). In the 1800s, sailors often spent long time at sea. That's why many developed scurvy.
While looking for more information about scurvy, 14 year old Amber Cui saw some dietary guidelines that recommended eating vitamin C rich fruits and vegetables raw. Amber hates raw green peppers, but doesn't mind them cooked. So she began to wonder what cooking does to vitamin C levels of vegetables.
Raw peppers indeed had the most vitamin C, she found. Ten minutes of boiling reduced the vitamin C level by about 25 percent. But as the peppers were boiled for 20 or 30 minutes, she says, the vitamin C level began to rise again. This might be because after being boiled for that long, the peppers begin to lose water. That could concentrate (浓缩) the vitamin in the vegetable.
Most people probably don't blend their peppers before they eat them. But we do chew and digest them. That's how the body is able to break down the hard cell walls of plants to approach their vitamins, notes Anitra Carr. She studies the health effects of vitamin C at the University of Otago in Christchurch, New Zealand.
Amber's pepper results are similar to other scientific findings, Carr says. “The amount of vitamin C in foods generally decreases with cooking,” she notes. The vitamin can go into the water in which peppers are cooked. Heat and other chemical processes can also break it down.
But we might still get more vitamin C from some cooked vegetables than raw, Carr says. How Cooking or blending can soften and break up plant cell walls, she explains. This can make it easier for the body to use the vitamins inside.

If you are driving with a minor (未成年人), smoking a cigarette could get expensive. About six states have already banned smoking in cars with kids. And Washington may be next.
House Bill 2086 is trying to ban anyone from lighting a cigarette while parking or driving if there is someone under 18 in the car.
“Harmful chemicals that are coming out of someone smoking in a car are the same as a firefighter fighting a forest fire for four to eight hours,” said state Representative Steve Bergquist.
Supporters of the Bill say they want to protect the quarter million Washington kids who live with smokers. “Research shows that kids of smokers are twice as likely to become smokers themselves. I am one of those children,” said Meagan Darrow, director of the Lacey based TOGETHER. “We also know it's an asthma trigger (哮喘触发); 10 percent of our kids in our state have asthma.”
The fine would be $125 for the first offense, and additional violations (违反) could be double. It would not show up on a driver's record or be reported to an insurance company but some say the government is still going too far.
If it is passed, that means police officers could simply pull someone over if they see someone smoking and they think a minor is in the car.
“When I see someone smoking with a kid in the car, I feel bad for the kids. But, on the other hand, it's one of those issues,” Thurston County resident Debra Defreyn said. “That's like coming to my house to tell me I can't do something in my house.”

There has been a lot of concern about the health risks linked with today's more sedentary (久坐的) lifestyle. When it comes to your health, sitting too much may be as bad for you as smoking. Many office workers spend a large part of their time being seated and physically inactive. A lack of physical activity is linked to some 5.3 million deaths worldwide each year. A sedentary lifestyle can cause many diseases, including heart disease, diabetes (糖尿病) and even some cancers.
“For many people who commute (通勤) to work and have office based jobs, there is no way to escape sitting for long periods of time. But an hour of brisk (轻快的) exercise every day can help office workers reduce their risk of an early death,” Ekelund from the Norwegian School of Sports Sciences says.
Ekelund says he “cannot stress enough” the importance of getting exercise and suggests going for a run in the morning, riding a bicycle to work, or taking a walk in the middle of the work day. An hour of physical activity is ideal. But if this is not possible, he suggests doing at least some exercise each day to reduce the risk of disease and an early death.
Ekelund looked at 13 earlier studies on the effect of inactivity. Study subjects were grouped according to the amount of activity they reported, from less than 5 minutes a day to up to 75 minutes a day. Ekelund found those who sat for eight hours a day, but got the suggested amount of exercise reduced their chances of dying at an early age. These people did better than those who sat less but were not active.
Ekelund says, “It is possible to reduce, or even remove, these risks if we are active enough, even without taking up sports or going to the gym.”

But now cancer is a leading cause of death and disability in poor countries as well. Cancer kills more than 7.5 million people a year worldwide. Almost two thirds are in the low income and middle income countries.
They discover cancer kills more people in developing countries than AIDS, tuberculosis (结核病) and malaria (疟疾) combined. But the world spends only 5% of its cancer resources in those countries.
Felicia Knaul from Harvard Medical School was one of the writers of the paper. She was in Mexico when she was found to have breast cancer. She received treatment there and her experience showed her the sharp difference between the rich and the poor in treating breast cancer.
Felicia Knaul says, “And we are seeing how this is attacking young women. It's the number two cause of death in Mexico for women thirty to fifty four. All over the developing countries, it's the number one cancer related death among young women. I think we have to again say that there is much more we could do about it than we are doing about it.”
Professor Knaul met community health workers during her work in developing countries. They were an important part of efforts to reduce deaths from the cancer. Scientists have discovered that tea contains high levels of compounds that help to reduce the amount of fat absorbed by the gut (内脏) and can cut cholesterol (胆固醇). However, proteins found in cows' milk prevent this fat fighting ability.
New research has shown that the compounds, called theaflavins and thearubigins, prevent obesity when given to rats that were also on a high fat diet. The researchers now believe this could explain why people in Britain appear not to benefit from the healthy effects of tea despite being among the world's biggest consumers of the beverage.
Dr Devajit Borthakur, a scientist at the Tea Research Association, in Jorhat, India said, “When tea is taken with milk, theaflavins and thearubigins form complexes with the milk protein, which causes them to precipitate (沉淀)”.
Scientists at the research center are now working on developing new kinds of tea with higher levels of these compounds, which are known as polyphenols, while also looking for ways of making them less influenced by milk.
A study by scientists in Japan, which was published this month in the journal of Nutrition, reveals that extracts from tea leaves prevent the absorption of fat in the gut of rats fed with high fat diets. These rats also had less fat tissue on their bodies and lower fat content in their livers.
Dr Hiroaki Yajima, a scientist with the Kirin Beverage Company in Japan who carried out the Japanese research, said, “Black tea extracts may prevent obesity because of eating too much by preventing intestinal lipid (肠脂) absorption.”
The fermentation (发酵) process used to make “black” tea leaves, the most commonly drunk type of tea in the UK, has also been found to boost levels of these fat fighting compounds compared to green tea, which is unfermented.
The research suggests that despite more attention being paid to the health benefits of green tea, black tea may have better effects on our health which are reduced by the tendency to drink it with milk.
