I will never forget the first dessert class at a cooking school in France, where a group of anxious dessert students (myself included) were tasked with preparing an apple pie. It looked simple enough, but I soon realized that it.was as far from simple as it could be. However, my knife and I mastered this French classic, as well as dozens of others.
After graduating, I found a job at a modern American restaurant in Florida. Despite the restaurant's tiny kitchen, I was excited to work under Sylvia, the executive chef. The first job she gave me was to make apple pies. I couldn't have been more excited until I realized these pies were actually in the form of a dumpling. But my education had made me stick to French tradition. It took me a minute to get comfortable with this way of cooking again. Slowly, I was forgetting my French tradition, and beginning to go with the flow more. The response(反应) from diners was good. Our desserts were sold out on most days.
Then one day, chef Sylvia gave me the chafe to make a new dessert and planned to add it to the menu for a week. Surprised and touched by the chance, I decided to go all out. I created a seasonal citrus mousse made with Florida oranges and pistachio croquant (a crisp, delicate cookie). But after a week, the apple pie dumplings continued to far outsell my special dessert. A sense of frustration went inside of me.
It finally made me aware that there isn't one "right" way to understand a cuisine, or set of ingredients(食材). Where one chef can look at apples, butter, and flour and see a French apple pie, another might see baked apple dumplings. Even though each person's translation may be different, I think they all deserve a spot on the table. And that was the most important lesson I discovered, through something as seemingly simple as fruit and dough.

A young Dutch inventor is widening his effort to dean up floating(浮动的) plastic from the Pacific Ocean. He has developed a floating device(设备) to trap plastic waste moving iota rivers before it reaches the oceans.
Bogan Slat was just 18 years old when he invented a system for catching waste in the ocean. He also founded an environmental group called The ocean cleanup. Its purpose is to develop the system. In 2019, Slat showed the next step: a floating device called Interceptor. It removes pastie out of rivers.the device is powered by energy from the sun. "The 1,000 rivers are responsible: for shout 80% of plastic going into the world's oceans," said Slat. Three of the machines have already been used. Each machine costs about $775,600, but the cost might drop as production increases.
Since they were used, the machines have been doing very well, collecting the plastic bottles and all the rubbish in the rivers. According to Slat, it is necessary to close "the tap", which means preventing more plastic from reaching the oceans in the first place. He wanted to clean them all in the next five years. "This is not going to be easy, but if we do get this done, we could truly make our oceans clean again," said seal.
The device is designed to be safe in rivers. Its nose is shaped to change directions to keep it away from larger floating things. It works by guiding pastie waste into an opening in the front of the device. The waste is then called inside the machine: where it is dropped into containers. The device sends a text message to local operators that can come and empty it when it is full.

Scientists say only enlarging the world's nature reserves to help protect plants and animals may be useless. The main reason is that levels of human activity are rising in and around the nature reserves. In fact, recognizing spaces as protected areas is not diminishing human activity there.
The researchers found that a lack of money to pay for land conservation(保护) is affecting conservation efforts. And it is a lack of communication between people who live in protected natural areas and outsiders. About 17 percent of the world is within protected areas, including the national parks, nature reserves and wilderness areas. Protected areas are important for supporting environments with many different kinds of plants and animals.
The researchers again found increasing human activity in most protected areas in every country. However, they said that human activity appeared to be more of a problem in nations with fewer roads and lower life standards on the Human Development Index(指数)(HDI).
Across the Northern Australia, protected areas often proved effective in slowing human activity when compared with unprotected areas. But in South America, Southeast Asia and African countries, pressure from human activity inside protected areas was higher.
Experts say governments need to provide fund support to help protected areas. Simply recognizing a place as a protected area can't be the beginning and the end of a conservation effort. Working with local people to take efforts is also important. If they're not partners in the protected areas, then wildlife conservation is much more difficult.

How Not to Annoy Wild Animals at National Parks National parks are treasures that offer people the chance to view native plants and animals in their natural habitat. However, as the number of visitors and wildlife populations increases, humans and animals too often find themselves in close distance. (1)
