I will never forget the first dessert class at a cooking school in France, where a group of anxious dessert students (myself included) were tasked with preparing an apple pie. It looked simple enough, but I soon realized that it was as far from simple as it could be. However, my knife and I mastered this French classic, as well as dozens of others.
After graduating, I found a job at a modern American restaurant in Florida. Despite the restaurant's tiny kitchen, I was excited to work under Sylvia, the executive chef (总厨). The first job she gave me was to make apple pies. I couldn't have been more excited—until I realized these pies were actually in the form of a dumpling. But my education had made me stick to French tradition. It took me a minute to get comfortable with this way of cooking again. Slowly, I was forgetting my French tradition, and beginning to go with the flow more. The response from diners was good. Our desserts were sold out on most days.
Then one day, chef Sylvia gave me the chance to make a new dessert and planned to add it to the menu for a week. Surprised and touched by the chance, I decided to go all out. I created a seasonal citrus mousse made with Florida oranges and pistachio croquant (a crisp, delicate cookie). But after a week, the apple pie dumplings continued to far outsell my special dessert. A sense of frustration (挫败) went inside of me.
It finally made me aware that there isn't one "right" way to understand a cuisine (菜肴), or set of ingredients (食材). Where one chef can look at apples, butter, and flour (面粉) and see a French apple pie, another might see baked apple dumplings. Even though each person's translation may be different, I think they all deserve a spot on the table. And that was the most important lesson discovered, through something as seemingly simple as fruit and flour.

China is recognized as a world leader in the development of artificial intelligence and facial recognition systems. A Chinese company says it has created a new facial recognition system that can identify (识别) people even if they are wearing masks. Engineers at the Beijing-based company say their system is the first to be created to effectively identify people wearing face masks.
The company told a news agency (机构) that a team of 20 people built the system in about a month. The system is based on existing technologies developed over the past 10 years. The process involved adding a collection of about 6 million unmasked faces and a much smaller collection of masked faces, the company said.
The company is now selling two main kinds of products that use the new technology. One performs "single channel" recognition, which is designed to be used at the entrances to buildings. The other product is a "multi-channel" recognition system that uses groups of surveillance (监视) cameras. It can identify individuals in a crowd of up to 30 people within a second.
"When people are wearing a mask that covers the mouth and the nose, the recognition rate can reach about 95%, which can ensure that most people can be identified," said Huang, vice president of the company. He added that, "the system's success rate for people not wearing a mask is about 99.5%."
However, the new system struggles to identify people wearing both a mask and sunglasses. "In this situation, all of the key facial information is lost. In such cases recognition is graunchy," Huang said.
People respond differently to the new technology. While some citizens have been against using such tools, the majority (大部分) have accepted the technology as an effective way to reduce crime (犯罪) and catch criminals.

It has been almost six and a half years since the American music group Pearl Jam published its tenth album. That changed Friday when the hand dropped its eleventh collection, Gigaton. Critics (批评家) have noted that this new album includes hard rock. Entertainment Weekly called the music "a gathering storm of guitars". In other words, there is some loud and wild music on Gigaton. But most reviewers agree that Pearl Jam continued to experiment with less traditional rock and roll sounds on the album.
But—back to the name of the album—Gigaton can also mean the weight or mass equal to 1 billion tons. The word is most often used these days in stories related to climate science and environmental damage. In fact, former U. S. President Barack Obama famously defined the word during a 2015 speech about climate change in Alaska and the Arctic. When discussing the huge, yearly loss of ice from Alaska's glaciers, he compared the amount to the size of the National Mall in Washington, D.C. as if it were a solid (固体的) block that stood almost 700 meters tall.
And climate change issues are at the heart of Pearl Jam's Gigaton. The album picture shows icefalls in Svalbard, Norway. Svalbard is one of the northernmost places where humans live in the world. Some climate scientists say it is warming faster than any other place. Pearl Jam has devoted most of its 30-year existence to environmental causes. The band and its members have won honors for raising money, climate change educational efforts and more. They also put money into environmental health projects to reduce the group's carbon footprint.
Pearl Jam was officially introduced into the Rock and Roll Hall of Fame in 2017. The lead singer Eddie Vedder's opening comments were about the environment. "So, climate change is real," he said. "And we... cannot... cannot be the generation that history will look back upon and wonder, why didn't they do everything humanly possible to solve this biggest danger in our time."
