Scientists have discovered that duckweed, a common weed that pollutes Britain's lakes and ponds, may hold the key to solving the world's food shortage crisis. Although unappetising in its raw form, duckweed is surprisingly high in protein, containing 45% in comparison to soybean's 36%. Experts in France and Spain have developed a method of drying duckweed and turning it into a high-protein powder, called Lentein. The superfood contains 68% protein and fibre and could eventually replace powdered milk and soya.
Spacecrafts of the future may carry large water tanks to grow micro-plants like duckweed to produce oxygen and food, as suggested by science fiction writers. Parabel, a food company producing the duckweed-based Lentein, is currently working on a white variety. The company claims it could help meet the estimated 70% increase in food demand over the next 30 years with the world's ever-growing population in need of sustenance. Lentein is harvested from open-air water tanks, requires no farming land, and can be grown wherever there's a water supply. It doubles in size every 16-32 hours and can be harvested daily. Its sustainability also stems from its recycling of water and prevention of evaporation, using less water than comparable crops.
The company has won an Innovation Award at the Institute of Food Technologies conference in Chicago for its work developing a method of making Lentein a convenient and useable foodstuff. Duckweed is a ubiquitous plant found all over the world, but grows best in equatorial regions. A plant in Uganda is currently being built to produce 2,000 tons of Lentein in its first year of operation.
