A charity is carrying badly ill children above the clouds to receive the lifesaving medical treatments they need. Founded by Mark Pestal, AeroAngel provides the children with private flights to hospitals across the United States for free.
While serving on the board of another charity, Pestal recognized the need for access to high-performance airplanes that can fly in bad weather and travel long distances without stopping. Then AeroAngel was born. Most of its flights are at least 500 miles in distance, and the kids they help are often battling serious illnesses which prevent them from being in large crowds and on commercial airlines. AeroAngel's private planes can fly into and out of small airports, making them accessible to families in both the countryside and big cities.
In addition to leading the organization, Pestal serves as a co-pilot on about 25% of its flights, but he wants to increase that number. “I'm working on putting myself out of the job as the director,”he said," so I can just be a co-pilot on the flights and fly the kids around.”
Four-year-old Dria from Idaho had been on a waiting list for an operation for almost two years. Her mother received a call on a Wednesday afternoon telling her there was a donor (捐献器官者) at Duke University. But Dria needed to be in North Carolina that Sunday for the operation. “With some miracles, AeroAngel was able to find a volunteer pilot to fly to Idaho on Saturday night and to be ready to leave for Duke on Sunday morning,” Dria's mother said.
Already helping one to two families each week, AeroAngel, which has received more than $3.5 million in donations to date, aims to expand (扩大) to be able to cover more areas and kids. "We've got a full list of probably over a dozen flights that we're trying to fill right now. I'd like to say that we're trying to have more pilots joining us and give them professional training. It means that we are building the program while continuing the flight services,” Pestal shared.

At Sushiro's Namba Amza restaurant, empty plastic cups and plates move along a belt. To one side, behind a plastic screen, a worker watches computer screens carefully. It's the development studio of Sushiro, the leading force in Japan's sushi (寿司) industry. Developers make improvements for the restaurant chains to deliver plates of freshly made sushi to diners' tables with lightning speed,and stay one step ahead in business.
The studio represents a typical Sushiro restaurant. "Here we can ensure that the delivery system works properly and sends the right order to the right customer quickly,” said Masato. "It's not exactly top secret, but our neighbors have no idea what we do here.”
At Namba Amza, each plate is fitted with a tag (标签) that is helpful in the process. The tags are read by sensors below the belt. “In the early days of serving sushi, cooks had no idea what people wanted. We use AI to examine which dishes stand out from the rest at particular restaurants nowadays in customers' eyes,” said Yutaka. Diners use a touch panel (面板) to choose from 150 items. Their bill is worked out quickly, and payment is made via a machine at the exit.
At the back of the kitchen, a robot makes tiny blocks of rice at the rate of about 3,600 an hour. It's impossible for a chef to do that as quickly as it. Further down the production line, another machine covers pieces of rice for the cooks to finish plating. The machine is programmed to make the sushi look like it's been made with human hands. They are not just normal blocks of rice.
But there are certain tasks that still need human labor, such as cutting the fish and placing it on rice.“Clearing the plates and cleaning the tables are also difficult for machines,”Sakaguchi said. "But the labor shortage is making it increasingly hard to find staff, so we need more help from machines.”

The sweet foods were not able to spread around until the “sugarcane” began to be developed in India. Once people found a way to transport sugar easily, they were able to bring it to other countries. Macedonia received this type of sugar in 300 BC, and then over 1000 years later, it spread to China. It wasn’t until the 12th century that its uses spread to Europe. However, even after sugar became well-known, it was still too expensive for most people to buy on special occasions. Some of the deserts that we still eat and love today were designed hundreds of years ago. The first recorded recipe of an apple pie was published in 1381. The first cupcake recipe happened nearly 450 years later.(19) Due to the expensive materials needed to cook deserts, most people didn’t try to experiment with new techniques.(20) In the present, open trade and access to information and resources has brought us the world’s knowledge of deserts. Sweet foods, candies and desserts can be found almost anywhere.
