Scandinavia(which is made up of Norway, Sweden, Denmark, and Finland) has a dish called lutefisk. It’s made from dried white fish. The dried fish is placed in water for several days. Next, it is placed in a lye (碱液) solution for a few more days until the flesh of the fish turns to jelly(胶状物). Lye is a poisonous(有毒的) liquid and a person can die after drinking it. Because of this, the fish then has to be soaked(浸透) in water (which is changed daily) for about a week, until most of the lye is gone. The fish will then be safe for eating.

In Italy, there is a kind of cheese made from sheep milk. It is called casu marzu.
What is different about this cheese is that it contains live insect larvae(昆虫幼虫). The larvae help in softening the texture(口感) of the cheese. The larvae may be about 8 millimeters(毫米) long each, but it is said that they can jump about 15 centimeters(into the air) when they are disturbed.
