“清朝山东巡抚丁宝桢对烹饪颇有研究,好辣。他命家厨将“酱爆鸡丁”改良为辣炒,开创了一到以鸡丁、红辣椒和花生米爆炒而成的佳肴,这本是丁家的私房菜,后人尽皆知。丁宝桢为官刚正不阿,死后追赠“太子太保”,“太子太保”是“宫保”之一,为纪念丁宝桢,所以这道菜命名为“宫保鸡丁”。”

1. Slice the tomatoes into small pieces.
2. Crack the eggs into a bowl and stir evenly.
3. Heat the oil in a pan.
4. Add the eggs and stir them for about 30 seconds; then set the scrambled eggs aside.
5. Add the sliced tomatoes into the pan and stir them for 2 minutes.
6. Add the scrambled eggs into the tomatoes.
