山东煎饼，传统特色面食。源于山东泰山。现代煎饼制。传说煎饼是诸葛亮发明的。诸葛亮辅佐刘备之初，兵微将寡，常被曹兵追杀，一次被围在沂河、湅河之间，锅灶尽失，而将士饥饿困乏，又不能造饭，诸葛亮便让伙夫以水和玉米面（应该为其他谷类，三国时期玉米还未从美洲引入中国）为浆，将金（铜锣）置火上，用木棍将米浆摊平，煎出香喷喷的薄饼，将士食后士气大振，杀出重围，当地人也习得此法做食，但铜锣昂贵，且易开裂，人们便以铁制成锣状的煎饼烙。从此煎饼在沂蒙乃至山东大地上流传至今。

煎饼的吃法，一般都要用煎饼卷豆腐，卷海带丝，卷肉丝，卷油条，以及卷其他各种各样菜肴。只要你能想到的，大概都可以卷进去。最经典、最普遍的吃法，当属煎饼卷大葱了。拿一大块煎饼对折几下，放上大葱,抹上辣的豆瓣酱或面酱，鲜嫩、水灵、味道十足。泰山人常卷小豆腐、山野菜、咸鱼吃 ！
