鹅毛笔是用大型鸟类的羽毛（feather）制成的，以往大部分羽毛从鹅的翅膀上取下来，经过脱脂、硬化处理后即可削切笔尖。在西方还没有发明出金属笔尖的钢笔和圆珠笔之前，鹅毛笔是主要的书写工具。使用钢笔前要先沾墨水（ink）才能书写。手工切割的鹅毛笔是书写西方书法（handwritting）的首选工具，能产生与金属制笔不同的笔触且更有韧性。鹅毛笔的笔杆能吸附墨水，在书写时有持续供水的效果。
