Top cookbooks of 2023
The Wok: Recipes and Techniques by J.Kenji Lopez-Alt
The Wok’s appeal is not innovation; you can find many dishes like Kung Pao Shrimp and Cumin Lamb on many Chinese restaurant menus. But you don’t have to leave your home. As far as I’m concerned, it’s worth the sticker price to learn the techniques.
Turkey and the Wolf: Flavor Trippin’ in New Orleans by Mason Hereford
Chef Mason Hereford has put to paper some of the magic that draws locals and tourists alike to his popular New Orleans sandwich shop, Turkey and the Wolf. The cookbook is full of recipes accessible to home cooks. The meatloaf is my favorite.
Mi Cocina: Recipes and Rapture from My Kitchen in Mexico by Rick Martinez
With seven sections focused on different regions across the country, Rick Martinez guides you through some of the essential recipes for each. The recipes are lovely, but what I love most are the stories alongside each of them. Food is deeply personal and with Mi Cocina, Martinez is sharing his life in food and inviting you to come along.
I Am from Here: Stories and Recipes from a Southern Chef by Vishwesh Bhatt
Western India and the Southern U.S. share more culinary (烹饪的) similarities than you’d think, from rice varieties to fresh tomatoes. Here, these ingredients explode in a delicious combination of seasonings and essential cooking techniques.
1. Whose book provides guidance on Chinese cooking
A. Rick Martinez’s. B. Vishwesh Bhatt’s.
C. Mason Hereford’s. D. J.Kenji Lopez-Alt’s.

I still remember my father’s embarrassment the day when he was invited to have dinner at a colleague’s house. Freshly arriving in Brazil, and not being able to look up on the Internet, he offended his hosts by making a hand gesture — a circle with the thumb and index finger. He had always understood it to mean “OK”, but in Brazil, it meant something different.
The incident was quickly forgotten. My father’s colleague understood that he probably wasn’t yet aware of the local meaning of the gesture. He gently explained it meant something rude, and then it was kept in mind under “things not to be done in Rio”.
I was reminded myself when touring China. After I replied to a friend’s WeChat message with a Van Gogh sticker that I thought meant “keep fighting”, another friend told me I used it wrong.
“The Chinese version is a bit different,” she said, taking out her phone and showing to me. “See these characters They mean ‘I will hit you!’”
Life is full of crossed meanings. In India, you sign to someone to come over with your palm down, not up. And in the Middle East, you never use your left hand for anything public.
As adults, we understand that even if it hurts, a mistake is only an insult (侮辱) when it is made on purpose. Yet, many conflicts come from misunderstanding, and history is full of the unfortunate outcomes of cross-cultural communication.
My father’s pre-Internet Brazilian mistake was forgiven because of context — he had just arrived and he didn’t know its local meaning. But when context is absent or simply differently understood — especially in the social media — perhaps it is time we all think twice before typing or talking, especially when the consequences can be more severe than the misuse of a WeChat sticker.
4. What can be inferred from the author’s father’s story
A. Cultural differences are common. B. The Internet helps to avoid mistakes.
C. Misunderstandings lead to bad results. D. The OK sign means differently in Brazil.
5. What did the author mean to do by using the Van Gogh sticker
A. To greet his friend. B. To threaten his friend.
C. To encourage his friend. D. To make fun of his friend.
6. What might result in if there is no context
A. Forgiveness. B. Cultural gaps. C. Cultural conflicts. D. Mutual(相互的) respect.
7. What could be the best title for the text
A. Tourism and Culture. B. Language and Culture.
C. Verbal Communication. D. Cross-Cultural Communication.
【答案】4. A 5. C 6. C 7. D
【解析】
【导语】本文是一篇记叙文。文章中作者结合亲身经历的一些例子,说明了文化差异可能导致误解和冲突。
【4题详解】
推理判断题。根据第一段“Freshly arriving in Brazil, and not being able to look up on the Internet, he offended his hosts by making a hand gesture — a circle with the thumb and index finger. He had always understood it to mean “OK”, but in Brazil, it meant something different.(刚到巴西,无法在网上查阅,他做的一个手势——用拇指和食指围了个圈——冒犯了主人。他一直把它理解为“OK”的意思,但在巴西,它的意思不同)”及第二段中的“My father’s colleague understood that he probably wasn’t yet aware of the local meaning of the gesture.(父亲的同事明白,他可能还没有意识到这个手势在当地的含义)”可知,父亲去同事家吃饭是日常生活,就因为一个“OK”手势导致了误会。可推知,父亲的故事表明文化差异很常见。故选A。
【5题详解】
细节理解题。根据第三段“After I replied to a friend’s WeChat message with a Van Gogh sticker that I thought meant “keep fighting”, another friend told me I used it wrong.(我用梵高贴纸回复了一个朋友的微信,我认为这意味着“继续战斗”,另一个朋友告诉我我用错了)”可知,作者打算用梵高贴纸来鼓励他的朋友。故选C。
【6题详解】
细节理解题。根据最后一段“But when context is absent or simply differently understood — especially in the social media — perhaps it is time we all think twice before typing or talking, especially when the consequences can be more severe than the misuse of a WeChat sticker.(但当语境缺失或理解不同时——尤其是在社交媒体上——也许我们在打字或说话之前都应该三思而后行,尤其是当后果可能比滥用微信表情包更严重的时候)”可知,如果没有背景或语境时,可能会导致文化冲突。故选C。
【7题详解】
主旨大意题。通读全文,并根据倒数第二段“Yet, many conflicts come from misunderstanding, and history is full of the unfortunate outcomes of cross-cultural communication.(然而,许多冲突源于误解,历史上充满了跨文化交际的不幸后果)”可知,本文作者结合亲身经历的一些例子,说明了文化差异可能导致误解和冲突。故D选项“跨文化交际”最符合文章标题。故选D。

Going against the tide of flocking to well-known tourist destinations on vacation, a growing number of holidaymakers in China tend to spend their leisure time at lesser-known attractions. Reverse tourism (逆向旅游) has appeared as a new trend among young holidaymakers in China.
According to data from an online travel agency, the number of rooms booked at hotels in less-traveled cities during the holiday was up 30 percent year-on-year. Bookings for four-star or five-star hotels in less-traveled places all increased ten times at a minimum. Some lesser-known scenic spots posted double-digit (两位数的) growth during the holiday. Baimaiquan Park in Jinan, the capital of Shandong Province, received 52,100 visits in the seven days, up to 15.78 percent year-over-year.
Besides crowds, some vacationers chose less-traveled places to save on the cost of trips to popular destinations. In addition, lesser-known attractions are not as “commercial” as developed ones and are able to offer more actual experiences and natural encounters.
Essentially speaking, total relaxation is becoming a real expectation for many people when they travel. Changes in demand may be the fundamental reason for the popularity of reverse tourism. COVID-19 is another key factor fueling reverse tourism. As preventive measures continue, traveling has an unpredictable quality. Travelers have thus become more cautious and tend to choose local attractions or places with fewer tourists.
“The rise of reverse tourism is not a bad thing,” said Zhengzhou Daily. It means that vacationers now have more options, which brings more possibilities to the tourism market. More importantly, it noted, the trend is set to force popular destinations to improve themselves instead of resting on their past honor.
Jiang Han, a senior researcher, said that reverse tourism will become one of the future directions for the market. To give a real boost to the tourism market, Jiang suggested that more efforts be made to tap the potential of underestimated, lesser-known destinations. It is necessary to dig deeper into the local customs and highlight the local characteristics to improve the quality of local tourism.
8. What do the statistics in paragraph 2 tell us
A. The popularity of travel agency in China.
B. The high income of hotels during holidays.
C. The contributions of tourism to the economy.
D. The increasing trend of reverse tourism in China.
9. What may be the root cause of the rise of reverse tourism
A. The impact of COVID-19.
B. Holidaymakers’ changing needs for travel.
C. The lower cost of heading to less-traveled places.
D. The lack of innovative improvements in famous attractions.
10 What does Zhengzhou Daily think of reverse tourism
A. It will drop with the recovery of economy.
B. It benefits both tourists and the tourism market.
C. It is beneficial to spread local culture to tourists.
D It blocks the development of some popular resorts.
11. What is Jiang Han’s advice on developing the tourism market
A. Upgrading the supporting facilities in tourist areas.
B. Improving the management rules of tourist attractions further.
C. Exploring the potential and features of lesser-known attractions.
D. Promoting the local characteristics of China through online media.
【答案】8. D 9. B 10. B 11. C

An increasingly popular way of eating called reducetarianism may sound like a new weight loss trend. But that’s not the goal; instead, reducetarianism is about cutting down the amount of meat you eat and making small changes that are healthy for you and the planet. “But the vast majority don’t want to go vegan”, says Brian Kateman, co-founder of the Reducetarian Foundation. So he has a simple message for us: “Don’t let perfection be the enemy of the good.” Compared with a vegetarian, reducetarians take a more flexible approach that acknowledges challenges of giving up meat entirely but still limits meat when possible.
The opposite side of eating less meat is eating more plant foods. Animal products often replace fresh fruits, vegetables and whole grains, leading to lack of nutrients from them. A more plant-based diet can help lower the risk of health problems including heart disease, colon cancer, and obesity. And research shows the climate impact from raising plant-based foods is less than that caused by animal-based foods. This is largely because it takes much more land, water, and other resources to produce a pound of meat than plant protein, says Dana Ellis, a dietitian.
The type of meat you buy matters too. Grass-fed meat — from animals raised without antibiotics (抗生素) — tend to be the more sustainable options. By grazing, cows encourage grass growth and nutrient turnover in the soil, which may help offset cattle’s climate impact, according to a study published in 2021.
Looking for local produce that requires no air transport and cutting down the food waste are also significant aspects of being a reducetarian. The message of reducetarianism is that you don’t have to be perfect to help yourself and the planet by making small changes in how you eat and shop for food. And that’s something we all can accomplish.
12. What does reducetarianism refer to
A. A new weight loss trend. B. A healthy diet with little meat.
C. An idea of accepting imperfection. D. An approach to being a vegetarian.
13. Why should eating more plant foods be encouraged
A. It ensures all the nutrients needed. B. It does less damage to the environment.
C. It helps to free people from diseases. D. It allows people to obtain more protein.
14. Who is more likely to be a reducetarian according to the passage
A. A meat lover. B. A cow raiser. C. A keen environmentalist. D. A devoted vegetarian.
15. What conclusion can be drawn from the last paragraph
A. Small changes in diet better man and the earth. B. Any quantity of food waste should be avoided.
C. Reducetarianism is something far from perfect. D. Food produced locally can offer more nutrition.
【答案】12. B 13. B 14. C 15. A

For most people traveling abroad, their first choice is probably to make a beeline for (直奔) tourist sights. For me, I find lots of joy in grocery (食品杂货店) shopping on holiday.
As a vegetarian (素食主义者) , finding restaurants that meet my needs is not always easy abroad. ____16____ The first thing I do, after dropping my bags off, is to go to a grocery store. That enables me to cook breakfast in the morning without walking around for hours trying to find “vegan breakfast” near me.
The variety of foods attracts me every time I travel somewhere new. In Malta, I found the most delicious chocolate-filled cakes, a product I would struggle to find even in the UK. ____17____ I was so delighted that I could enjoy such an unexpected treat. Another surprise was their selection of ice cream available even in the smallest grocery stores.
____18____ Looking for smoked tofu and corn pancakes turns into quite a mission whenever I visit Cluj-Napoca in Romania. There is usually only one variety of smoked tofu, sold in a very small tub (食品盒) and only in the cafeteria section. ____19____ That is because they are never available at the smaller ones.
Grocery shopping on holiday sounds unusual. But it means being involved in the day-to-day lives of a country’s citizens. I can pretend I am a local and put myself in their shoes. I can watch kids begging their parents for sweets, an international experience that needs no language, or watch couples pick up snacks and drinks for a party on a Friday night. ____20____
A. I ended up eating these every day for breakfast.
B. The challenge of finding food is interesting, too.
C. So I always make sure to book a place with a kitchen.
D. Grocery shopping was a vital part of the holiday experience.
E. It’s an act of understanding people as much as of buying food.

At this moment the creature put its front legs on the side of the pram and looked at the sleeping baby, licking its face. The baby woke up and began to cry quietly.
Mrs.Clarke wanted to scream, but she knew it would be wrong to do that. What should she do “Inform the police,” the radio had said. But that meant leaving the garden and going to the telephone near the front door. She was sure that somehow she must get the wolf away from the prom. The she remembered the piece of meat she had bought. It was on the kitchen table.

2. Which book is titled after its author’s sandwich shop
A. The Wok. B. Turkey and the Wolf.
C. Mi Cocina. D. I Am from Here.
3. What is the similarity between Mi Cocina and I Am from Here
A. They share some stories.
B. They feature Indian and American food.
C. They stress food’s role in connecting cultures.
D. They emphasize the importance of fresh ingredients.
B

Besides crowds some vacationers chose less-traveled places to save on the cost of trips to popular destinations.

Mrs.Clarke switched the radio off: she wanted to make her middy lunch before her baby woke up.She pushed the pram(婴儿车)into the garden, left it under a tree out of the sun and went into the kitchen.
