As a result of trade, travel and migration, different cuisines have spread across the world. Many recipes, chefs and restaurants try to announce that their food of a country or region is the most authentic(正宗的). But is this a good thing
People care about authenticity because food traditions are closely linked to identity, particularly for migrant communities. Sociologist and professor of food studies, Krishnendu Ray, explains that home cooking is often the last way that communities can show their identity. British celebrity chef Jamie Oliver was accused of trying to take advantage of positive feelings about Jamaica. His ready meal product had a Jamaican name, but was unlike real Jamaican cooking.
However, food consultant Sara Kay asks whether there are problems with the idea of authenticity. She stresses that these ideas often come from the expectations that majority cultures have about minority cultures and their food. These can be restricting—restauranteurs have complained that people expect Asian food to be cheaper than that from European cultures. Expectations can also give people a false idea of what is authentic. While large cities are full of eateries representing different countries—China, India, Italy, Mexico and more—these labels can oversimplify the reality of food from these countries. Stephanie Elizondo Greist is surprised by the recognition that foods in Mexico are more authentic than what she ate growing up as a Mexican-American in Texas, because she feels that both are authentic examples of Mexican food.
A more controversial view of authenticity was stated by American Chef Andrew Zimmern, who claimed that he could bring in Chinese dishes in a more authentic way than existing restaurants—many of which are owned by Chinese-Americans. Writer and food podcaster Ruth Tam points out that while these restaurants altered their menus to suit local tastes, so does Zimmern. So, while food and identity are closely linked, and failure to respect authenticity can cause offence, could there be problems with the whole idea of authenticity

Located at the foot of the Wudang Mountains in China’s Hubei Province is the home of 64-year-old Marc Verlant, which possesses a fascinating collection of Chinese artifacts. The artfully arranged decorations such as miniatures(微缩模型)of ancient Chinese towers, traditional wooden carving s and Chinese paintings clearly con vey that the house owner is trying to creatively explore and develop a better understanding of Chinese culture.

In 2004, to treat his body after an accident, Verlant moved here to learn Chinese martial arts, and gradually fell in love with martial arts as well as Wudang’s culture. For him, it all started when his French-language student, who was a local tour guide, aroused his interest in local culture. For years, he volunteered as a foreign-language interpreter and tour guide in the Wudang Mountains, sharing Wudang’s culture with tourists from across the world. During the past two decades, he has witnessed and experienced the rapid development of this mountainous region. “When I first arrived in Wudang, there was neither the high-speed railway nor the shuttle bus, and many foreigners didn’t know how to come here,” he recalled.
The Frenchman’s enthusiasm inspired those around him. “I learned a lot about Wudang from Marc, and his positive attitude toward life also influenced me to be more outgoing and energetic,” said his wife, who is a native of Shiyan City, where the Wudang Mountains are located.

Pickled(腌制的)vegetables, fish and meat preserved in salt, and bread baked in a circle with a hole in the middle(e. g. bagels), were once the foods for the poor of all backgrounds in central and eastern Europe. But it was Jewish immigrants who brought these recipes to the West, particularly to America, in the late 19th and early 20th centuries.
Bagels and pickled foods became mainstays of Jewish deli(熟食店)cuisine, which are the subject of an exhibition at the New-York Historical Society called “I’ll Have What She’s Having”. The exhibition implicitly(含蓄地)asks whether a cuisine that has been enjoyed by millions and helped define the taste of New York City continues to be lively today.
There is a distinctly sad tone to it. Though some foods exist over several decades, the number of Jewish delis in America has dropped sharply. Black-and-white pictures of long-gone people eating at long-gone places line the exhibition’s walls. After all, the Jewish deli is a product of a bygone era, shaped by immigration, discrimination and inner-city life. As immigrants’children fit in with the locals and moved away, the deli became one of many dining choices—less a center of communal Jewish life and more a pleasant place to occasionally chat and talk about the past.
Meanwhile, deli food itself has crossed its limits. For a while, McDonald’s in Germany offered a “Grilled Texas Bagel”. That is a senseless phrase to a deli expert: a decent bagel belongs nowhere near a grill and has nothing to do with Texas. But it suggests that bagels—like pizza, hot dogs and other foods once only consumed by particular ethnicities—now come across less as specifically Jewish than as broadly American.
The most hopeful part of the exhibit is at the end: a case of menus from modern delis across the country. They were founded by young Jewish chefs determined to keep their culinary(烹饪的)traditions alive—not because discrimination left them no other way out, but because the food is delicious, inspiring, and an irreplaceable part of America’s culinary landscape.

Do Lobsters(龙虾)Feel Pain
The traditional method for cooking a lobster— boiling it alive— raises the question of whether or not lobsters feel pain. 36 Lobsters go bad very quickly after they die, and eating a dead lobster increases the risk of illness and reduces the quality of its flavor. The most human e tool for cooking a lobster is the CrustaStun. This device electrocutes a lobster, making it unconscious in less than half a second or killing it in 5 to 10 seconds. And then, it can be cut apart or boiled.
Unfortunately, the CrustaStun is too expensive for most restaurants and people to afford. Some restaurants place a lobster in a plastic bag and place it in the freezer for a couple of hours, during which time it loses consciousness and dies. 40 But it is probably the most human e option for killing a lobster before cooking and eating it.
