Michael Gonsalves, a chef of Golden Oak at Disney World, has a cuisine concept rooted in fresh, locally-sourced ingredients that originated from childhood harvesting produce from their family garden with his mom to eventually leading kitchens at Walt Disney World Resorts to employ a sustainable model.
“Truly the whole process starts with menu planning,” he said. Creating one dish leads into the creation of many more through the end-to-end use of products. As chefs, they are always searching for the best ingredients. It is then their focus to ensure they appreciate and respect all that go into each and every one of them. When they do have waste, even if minimal, they shift it from landfills to transform it into compost (堆肥) that’s then used across the Walt Disney World property. They also support Second Harvest, a local community food bank where healthy produce, prepared, but not served, meals eatable for human consumption are donated. Disney also works with pig farmers when they can’t distribute foods past the point of safety for human consumption. Besides, wildlife reservations love to get the meat because tigers and wild cats can still eat that.
Their operations are “on a path to a sustainable zero waste kitchen of tomorrow” where chefs learn the full-life cycle of plants from seed to plate and gain a better understanding and appreciation for the product and their craft.
Golden Oak at Disney has millions of bees that produce up to 300 pounds of honey per year, plus those bees help with cross pollination (授粉) of their gardens on a daily basis. They advocate a culture that helps develop not only the quality of food, but an appreciation for nature.

When most people think of drones (无人机), they think of technology and fun. Safe to say, few people would think about farming. However, a group of students from York College of Pennsylvania have been building a drone that will not only help local farmers but the environment, as well.
Samantha Gotwalt and Blayde Reich, two senior Mechanical Engineering majors at York College in the group, both found the work to be quite fascinating. According to Samantha, the idea came from a York College professor, who has worked with drones, and wanted to get students involved with a project beneficial to the community. “We really want to help farming and agriculture. It’s super-important to America and our economy,” Blayde says. “We want to help the smaller farmers, and one of the perks is not having to spend their money on fertilizer and pesticides (杀虫剂).”
The idea is to design and build a drone that will take video imagery of the fields to determine what is needed to produce the best crop, while saving money and sparing the environment by reducing pollutants in the water runoff. Ideally, that data gained will help the farmers better determine what chemicals they need — and what they don’t.
However, finding the right equipment for the project was a challenge, starting with what drone the team would design for this particular usage. Samantha says she researched durability and control of drones to help make the proper determination.
“We are flying over the field and we want to have enough efficiency and go relatively slow enough that our pictures turn out well - and fly low enough that it is not using up all of its power,” she says. “The fields are a couple hundred acres(英亩), so you need your drone to be able to fly the length of that field.”
Blayde says the team continues to learn a great deal of information that will help the farmers and the environment.

In shallow coastal waters of the Indian ocean, Dugong, a kind of sea cow, is in trouble. Environmental problems pose such a major threat to its survival that the International Union for Conservation of Nature (IUCN) upgraded the species’ extinction risk status(地位)to vulnerable (脆弱的).
Much worse, Dugongs are at risk of losing the protection of the Torres Strait Islanders, who have looked after them historically, hunting them for food sustainably and monitoring their numbers. These native people keep their biodiversity, and have deep knowledge about their environment. But these people are also threatened, in part because rising sea levels are making it difficult for them to live there.
This situation isn’t unique to Dugongs. A global analysis of 385 culturally important plant and animal species found 68 percent were both biologically vulnerable and at risk of losing their cultural protection.
The findings clearly illustrate that biology shouldn’t be the primary factor in shaping conservation policy,says anthropologist Victoria Reyes-García.When a culture declines,the species that are important to that culture are also threatened.“Lots of conservationists think we need to separate people from nature,” says Reyes-García. “But that strategy misses the caring relationship many cultural groups have with nature.”
One way to help shift conservation efforts is to give species a “bio-cultural status,”which would provide a fuller picture of their vulnerability. In the study, the team used a new way to determine a species’ risk of disappearing: the more a cultural group’s language use declines, the more that culture is threatened.The more a culture is threatened, the more culturally vulnerable its important species are. Researchers then combined a species’ cultural and biological vulnerability to arrive at its bio-cultural status. In the Dugong’s case, its bio-cultural status is endangered, meaning it is more at risk than its IUCN categorization suggests.
This new approach to conservation involves people that have historically cared for them. It can highlight when communities need support to continue their care. Scientists hope it will bring more efforts that recognize local communities’ rights and encourage their participation-taking advantage of humans’ connection with nature instead of creating more separation.

When most people think of drones (无人机), they think of technology and fun. Safe to say, few people would think about farming. However, a group of students from York College of Pennsylvania have been building a drone that will not only help local farmers but the environment, as well.
Samantha Gotwalt and Blayde Reich, two senior Mechanical Engineering majors at York College in the group, both found the work to be quite fascinating. According to Samantha, the idea came from a York College professor, who has worked with drones, and wanted to get students involved with a project beneficial to the community. “We really want to help farming and agriculture.
