The spread of Western eating habits around the world is bad for human health and the environment. These findings come from a new report in the journal Nature.
David Tillman, a professor of ecology at the University of Minnesota, America, examined information from 100 countries to identify what people ate and how diet affected health. He noted a movement beginning in the 1960s. He found that as nations industrialized, population increased and earnings rose, more people began to adopt what has been called the Western diet. The Western diet is high in sugar, fat, oil and meat. By eating these foods, people began to get fatter and sicker. David Tillman says overweight people are at greater risk of noninfectious diseases like diabetes (糖尿病) and heart disease.
Unfortunately, if people adopt this Western diet, they are going to have these health problems, especially in developing countries in Asia. China is an example where the number of diabetes cases has been jumping from less than one percent to 10 percent of the population as it began to industrialize over a 20 year period. And that is happening all across the world, in Nigeria and so on.
And, a diet bad for human beings is also bad for the environment. As the world's population grows, more forests and tropical areas will become farmland for crops or grassland for cattle. We are likely to have more greenhouse gas in the future from agriculture than that coming out of all forms of transportation right now.
Mr. Tillman calls the link between diet, the environment and human health, “a dilemma”, a problem offering a difficult choice. He says one possible solution is leaving the Western diet behind.

Personalized Exercise
At the start of every year, many of us promise ourselves that a certain number of times a week we will go to the gym or attend an exercise class. What's your opinion on spicy food Some people cannot handle even the smallest amount of the chili (辣椒)in their dinner while others can't get enough of it.
Scientists have long been puzzled by why some people love chilies while others loathe them. Plenty of research has been done on the subject, dating as far back as the 1970s. Previous results showed that a love of chilies is related to childhood experiences, and cultural influences affect our taste buds, too. But the latest study has found that a person's love of spicy food may be linked to his or her personality more than anything else, CBC News reported.
“We have always assumed that liking drives intake—we eat what we like and we like what we eat. But no one has actually directly bothered to connect these personality traits (特点) with the intake of chili peppers,” said Professor John Hayes from Pennsylvania State University, who led the study.
But before you look at the study, you should first know that “spicy” is not a taste, unlike sour, sweet, bitter and salty. It is, in fact, a burning sensation that you feel on the surface of your tongue. This got scientists thinking that maybe a love of spicy food is brought about by people's longing for thrills, something they usually get from watching action movies or riding a roller coaster.
In the study, 97 participants, both male and female, were asked to fill out questionnaires about certain traits of their personalities, for example, whether they like new experiences or tend to avoid risks. They were then given cups of water with capsaicin, the plant chemical that makes chilies burn, mixed into them.
By comparing the answers to the questionnaires and what participants said they felt about the spicy water, researchers found that those who were most tended to enjoy action movies or take risks were about six times more likely to enjoy the spicy water.
Interestingly, we used to believe that the reason why some people can withstand spicy food is that their tongues have become less sensitive to it. However, this latest study has found otherwise.“It's not that it doesn't burn as badly, but it's that you actually learn to like the burn,” explained Hayes.

If you are overweight, you should watch your diet carefully in order to keep fit. The best way to do this is to start a weight control program. At first it is wise to talk with your doctor. He can advise you of the number of calories you should have in your meals each day. He can tell you about exercising while you are on a diet. A good rule is to lose slowly. For the past 17 years my life was very happy. Then the first sad thing happened. My mother became very ill, and soon she knew that she was dying. Just before she died, she asked Elizabeth and me to go to her room. She held our hands and said, “Victor and Elizabeth, my children, I'm very happy because you love each other, and because one day you'll get married. Everyone in the family loves you, Elizabeth. Will you take my place in the family, my dear I can die happily if you look after them when I have gone.”
My mother died and we were very sad, because we loved her dearly. Elizabeth was brave and helped us; her sweet smile gave us some happiness in the unhappy days after my mother's death. The time came for me to go to university. I didn't want to leave my sad family, but we all knew that I should go. It was hard to leave, too, because the parents of my good friend Henry would not let him go to university with me. So I had to go alone.
On my first day at university I met my teacher, Professor Waldman, who was one of the greatest scientists in the world. He gave a wonderful talk to all the students who were starting at the university. He ended his talk by saying, “Some of you will become the greatest scientists of tomorrow. You must study hard and discover everything that you can. This is why God made you intelligent—to help other people.”
After the professor's talk, I thought very carefully. I remembered the storm when I was 15; I remembered how the lightning had destroyed the trees. From then on, I wanted to use electricity to help people, and I wanted to discover the secret of life. I decided to work on these two things.
I started to work the next day. I worked very hard and soon Professor Waldman and I realized that I could learn to be a very good scientist.
The professor helped me very much, and other important scientists who were his friends helped me, too. I was interested in my work and I did not take one day's holiday during the next two years. I did not go home, and my letters to my family were very short.
After two years, I had discovered many things and I built a scientific machine that was the best in the university. My machine would help me answer the most important questions of all. How does life begin Is it possible to put life into dead things To answer these questions about life, I had to learn first about death. I had to watch bodies from the moment when they died and the warm life left them. In the hospital and in the university, I watched the dying and the dead. Day after day, month after month, I followed death, so it was a dark and terrible time.
I built a tall mast about 150 meters high, which was higher than the tallest building in the city, to catch lightning and send the electricity down to my machine in the lab. I believed I could use that electricity to give life to things that were dead.

How often do you exercise A new study finds that most kids aged 12 to 15 aren't getting enough physical activity. The results are based on about 800 kids. As part of the study, the young teens tracked and reported on their own activity levels, and took physical exams.
The US fitness guidelines recommend an hour or more of physical activity every day. According to the study, only 1 in 4 kids in the US get enough physical activity.
“It's certainly very worrying to see that our kids are engaging in such a limited amount of physical activity each day,” said Dr. Stephen Pont. He is an expert on children's health.
Few kids in the survey met the guidelines for physical activity that raises the heart rate and makes them breathe harder. Overall, about 25% said they got an hour of that kind of violent exercise every day. Kids also reported on which activities they did most often outside of the school gym class—basketball for boys and running for girls.
The study found that obese (肥胖的) teens were less active than normal weight girls and boys. Overweight girls were slightly less active than normal weight girls, but levels were similar among overweight and normal weight boys. The study also said that the overall obesity rate for children aged 2 to 19 is 17%, or about 12.5 million kids.
“There's always room for improvement,” said health expert Tala Fakhouri, who was the lead author of the study. She also said the results provide useful information to help with fitness campaigns such as Let's Move, which was launched by Michelle Obama in 2010. To inspire kids to eat right and get in shape, Michelle visited schools and held exercise events. She also called on schools to offer regular gym classes.
The study also suggests kids who get physical education at school may get better grades.
