Keeping traditions alive is never an easy thing. Chen Zunkai is the founder (创办者) of Baoyuan Dumpling House. She has spent over 17 years improving one of the most traditional Chinese foods — dumplings.
Her dumplings are not white ones simply filled with meat, but colorful ones using more than 150 kinds of fillings (馅料).
“What I try to do is to make dumplings have a taste of home,” says Chen. “I hope all customers, Chinese people or foreigners, can taste something nice.”
Chinese dumplings are believed to be more than 2,000 years old. Traditionally, they are made and eaten by people in North China at some festivals such as the Spring Festival.
For Chen, her idea came after she found that there were not many choices for those who preferred dumplings. Most vegetarian (素菜的) dumplings have a filling of only two or three kinds of ingredients, and not one restaurant in Beijing has more than 10 kinds of vegetarian fillings.
“I thought I could do better,” says Chen.

Lanterns have been part of Chinese culture for centuries and play an important part in many celebrations. In ancient times, there were mainly three kinds of lanterns:
Palace lantern (宫灯)
It was mainly used in palaces in ancient times. When making palace lanterns, fine wood was used. The palace lanterns were covered with silk or glass. Different kinds of pictures were drawn on the covers. These lanterns were not only used as lights but also as decorations (装饰)in palaces.
Gauze lantern (纱灯)
Less expensive bamboo and gauze (薄纱) were used to cover the lantern. Red gauze was used when making them. In Chinese culture, red lanterns are symbols of happiness. So red lanterns are always hung on important festivals such as Lantern Festival, Spring Festival and National Day in parks or along main streets. In some famous Chinatowns abroad, you can see red lanterns all year round. They have become a symbol of Chinese culture worldwide.
Shadow-picture lantern (走马灯)
It was usually used for amusement. The shape was much like that of the palace lanterns. There were two layers (层)of covers and pictures were drawn on the inside layer. When the candle was lit (被点燃), the heat caused a paper wheel inside the lantern to turn around, so that moving pictures appeared on the outside cover.
