When she worked in banking, Irini Tzortzoglou’s idea of cooking was to pick up a ready meal from Marks &Spencer on her way home, and put it in the oven (烤箱). But now, since winning the BBC cooking competition Master Chef at the age of 60, with menus inspired by her Greek heritage (遗产), food has become her life and new career.
She had not been overly interested in cooking, though as a child, food was an important part of her life. Tzortzoglou, 64, was born in Greece, where her grandparents’ house was always open, and her grandmother would often be cooking for dozens of people. Tzortzoglou would help out: “I loved the smells. I loved the processes.”
Tzortzoglou felt very bored after retiring. Then one day her husband said, “Why don’t you try Master Chef because you always love watching it.”
She was a reasonably good cook, who loved entertaining and could put together a decent dinner party menu but competing on the show demanded a whole new skill level. “I didn’t want to embarrass myself by leaving in round one, so I trained myself for a year,” she said.
She put in time, effort and money. She went to Athens to see what was happening with Greek food today. She ate at Michelin-star restaurants to see what Greek Master Chef and the young chefs were doing. And then she started practicing. She also started physical training because she could see how tough it was to run around the kitchen while filming, or stand for hours.

Scientists at Purdue University created the world’s whitest paint — a discovery that not only adds yet another choice to the “which white should we paint this wall” dilemma, but also might help the climate crisis.
The paint was developed by Purdue mechanical engineering professor Xiulin Ruan and his team. It works through a passive cooling technology that offers great promises to reduce space cooling cost and global warming. “When we started this project seven years ago, we had saving energy and fighting climate change in mind,” Ruan said in a podcast (播客) episode of This Is Purdue. They wanted to create a paint that would reflect sunlight away from a building, dramatically decreasing the need for air conditioning.
Heating, cooling, and lighting account for 28 percent of the world’s total greenhouse gas emissions. And overusing air conditioning can overwhelm a city’s power grid and cause blackouts (停电). In a Queens blackout in 2006, 175,000 people were left without power, which lead to 40 deaths. This paint could effectively be an alternative to air conditioners in some places.
The paint reflects 98.1%of solar radiation while also giving out infrared (红外线的) heat. Because the paint takes in less heat from the sun than it gives out, a surface coated with this paint is cooled below the surrounding temperature without using power. Covering a roof area of 1,000 square feet with the paint could create 10 kilowatts ofcooling power, the researchers found.“That’s more powerful than the air conditioners used by most houses,”Ruan told This Is Purdue.
You can’t buy the paint just yet, but researchers are partnering with a company to put the paint on the market. While individual action to fight elimate change can help save our planet, it’s important to note that the vast majority of the world’s greenhouse gas emissions can be traced back to 100companies. Maybe we can douse(浇) those companies with this white paint, too — it could be worth a shot.

People generally feel secure with certainty. To be certain is to have power and control. Certainty is often used as a metric (衡量标准) of value, shaping how people view themselves and others. For example, people tend to respect those who present themselves ascertain while viewing those who express uncertainty as wishy-washy, and untrustworthy. Young people growing up in a culture that identifies strongly with certainty are told that to be certain is to be secure, right, and good. But the reality is that certainty is transient; it is more a feeling than a fact. Too often people act as if certainties are drawn in permanent marker: Thick, clear, definitive, and rigid. But they are not. They are actually drawn with pencil—ready for revision, editing, and change.
Spring tide’s recent report, The State of Religion and Young People: Navigating Uncertainty, allows us to hear how young people are questioning certainty and increasingly rejecting the rules that isolate them from themselves and one another. Milly, a 25-year-old quoted in the report, described her experience in a group discussion where uncertainty was welcomed rather than criticized:
“Like, struggling to know what or what not to believe....That’s something we talked about in the group. It actually makes me feel a little bit better. It’s like, oh, like we can have doubts. We can struggle with these feelings and they’re still, we’re still accepted, you know So that was actually kind of refreshing” (Spring tide, 2021, p.46).
Young people are not rejecting certainty, but they are not accepting prepackaged answers or one-dimensional solutions. They are reexamining pre-drawn labels, beliefs, and identities and daring to ask “Why ” Their courage to question is an invitation to all of us to reconsider and rediscover uncertainty. We can listen to and learn from young people, embracing(拥抱)this opportunity as a moment of critical self-reflection and growth. When she worked in banking, Irini Tzortzoglou’s idea of cooking was to pick up a ready meal from Marks &Spencer on her way home, and put it in the oven (烤箱). But now, since winning the BBC cooking competition Master Chef at the age of 60, with menus inspired by her Greek heritage (遗产), food has become her life and new career.
She had not been overly interested in cooking, though as a child, food was an important part of her life. Tzortzoglou, 64, was born in Greece, where her grandparents’ house was always open, and her grandmother would often be cooking for dozens of people. Tzortzoglou would help out: “I loved the smells. Scientists at Purdue University created the world’s whitest paint — a discovery that not only adds yet another choice to the “which white should we paint this wall” dilemma, but also might help the climate crisis.
The paint was developed by Purdue mechanical engineering professor Xiulin Ruan and his team. It works through a passive cooling technology that offers great promises to reduce space cooling cost and global warming. “When we started this project seven years ago, we had saving energy and fighting climate change in mind,” Ruan said in a podcast (播客) episode of This Is Purdue. They wanted to create a paint that would reflect sunlight away from a building, dramatically decreasing the need for air conditioning.
Heating, cooling, and lighting account for 28 percent of the world’s total greenhouse gas emissions. And overusing air conditioning can overwhelm a city’s power grid and cause blackouts (停电). In a Queens blackout in 2006, 175,000 people were left without power, which lead to 40 deaths. This paint could effectively be an alternative to air conditioners in some places.
The paint reflects 98.1%of solar radiation while also giving out infrared (红外线的) heat. Because the paint takes in less heat from the sun than it gives out, a surface coated with this paint is cooled below the surrounding temperature without using power. Covering a roof area of 1,000 square feet with the paint could create 10 kilowatts ofcooling power, the researchers found.“That’s more powerful than the air conditioners used by most houses,”Ruan told This Is Purdue.
You can’t buy the paint just yet, but researchers are partnering with a company to put the paint on the market. While individual action to fight elimate change can help save our planet, it’s important to note that the vast majority of the world’s greenhouse gas emissions can be traced back to 100companies. People generally feel secure with certainty. To be certain is to have power and control. Certainty is often used as a metric (衡量标准) of value, shaping how people view themselves and others.
