Most of us have memories from childhood that go something like this: You're not leaving the table until you eat all your vegetables. How lucky we were to have nutritious food, even if we had to learn to like it.
According to the Houston Health Dement, for nearly one quarter of children living in Houston, Texas, the choice to eat healthily doesn't exist. They are unable to obtain fresh produce, relying entirely on canned and packaged goods. A lack of fresh meat and produce in your diet can lead to increases in depression and obesity (肥胖) and greater risks of heart disease and cancer. A poor diet is also tied to poor performance in school for young children.
Annie Zhu was shocked to find out so many children in Houston lived in food deserts. She was also shocked to see how much fresh food supermarkets throw away every day. So she and her twin sister Shirley went to work. First, they partnered with the Houston Health Department to distribute food at community centers. With the help of a food rescue organization Second Servings, they collected surplus (过剩的) food from grocery stores and began organizing monthly markets. They even connected with human service agencies to provide help beyond food. Lastly, since fresh food needs to be picked up right away, they developed a text-messaging app Fresh Hub, which tells people when and where the markets are.
Each month, Fresh Hub organizes high school students who wear green shirts and go to set up stands of fresh produce, baked goods and packaged meats. The Zhu sisters and the green dream team have distributed over 1,500 pounds of food. And while families are collecting food, volunteers are entertaining kids with art projects that teach healthy eating.
At the end of the day, Annie says they are happy to be making a difference. "Frustration over the unfair circumstances built into society led us to meet incredible people," says Annie. "I know I'm not alone on this journey to help the underserved-and I know my journey has only just begun!"

In Kolkata, I met a flower vendor who told me he gave up selling fresh flowers years ago. He ticked off the reasons why his plastic flowers were better than the real thing: They cost less, look real, and don't wilt (枯萎).
The miracle of plastics arrived in India recently enough that there is no Hindi word for the stuff, and in some places take-out food still comes wrapped in banana leaves. The love affair really took off in the 1990s, as the rapid growth of the global plastics industry co-occurred with the development of India's economy. If in the U.S. the golden age of plastics ushered in (开创) the throwaway culture of convenience, in India, affordable plastic consumer goods simply made life better. Plastic storage containers, bags, and food wrap helped keep food fresh longer. Barefoot children could get cheap shoes, and inexpensive fabrics allowed them more clothes.
Yet even with the improving quality of life, the romance faded fast. Before the decade ended, India found itself swimming in plastic packaging waste that outpaced any ability to contain it. By the mid-1990s, newspaper accounts sounded the alarm. Plastic bags, handed out by the thousands in department stores in Mumbai, were "suffocating (使窒息) the city".
The problem has since spread beyond cities to rural areas and even nature reserves. At the Rajaji National Park outside Rishikesh, a city in the Himalayan foothills made famous in the West by the Beatles, who spent several weeks there in 1968, elephants are eating plastics in dump sites. "There are many places just outside the forest where villagers throw trash out, and the wild animals go there to cat," villager Mohammad Yusuf told me.
In nearly every nation struggling to contain plastic waste, the problem is primarily packaging. Globally, it accounts for 36 percent of the nearly 500 million tons of plastic produced annually. India's problem has less to do with per capita consumption than lack of adequate waste collection. In the United States, a person creates an average of 286 pounds of plastic waste a year-more than six times India's rate of 44 pounds per person. But the U.S. has a more or less functioning system of rubbish collection and disposal (处理). Trash collection rates in India are often low.

The Earth's population is expected to reach 9.7 billion by 2050. Experts estimate food production will have to increase by 70 percent to keep pace with that growth. Previous methods of agriculture will soon no longer be an option. According to a 2018 study, we have to turn away from meat and dairy products.
U.S. consumers have proved themselves willing to test the waters. Americans spent $1.4 billion on plant-based meat in 2021, representing a market share of 2.7 percent of all meat sales. The plant-based food companies claim their burgers use less land and water and generate less greenhouse gases. "I think seaweed needs branding," says Mark Kulsdom, co-founder of the memorably-named Dutch Weed Burger. As Kulsdom explained Dutch Weed Burgers are vegetarian but for meat eaters. A decade after launching their first product, he and his partners now sell about a quarter of a million burgers each year.
Ultimately, Kulsdom is striving for a culture change. "I believe we need to raise interest sometimes by using a bit of an unorthodox (非正统的) approach to things," he adds. "When people get what they already know, it's not that interesting. When their curiosity is awakened, that's when new things and ideas can enter their minds."
In 2008, researchers discovered 14,000-year-old seaweed fragments (碎片) in southern Chile that had been pressed into cakes and clearly been cooked. As they wrote in Science, all seaweeds recovered at the site are excellent sources of iodine, iron, zinc, protein, hormones and a wide range of elements.
