Isle Of Skye
This island feels totally different from other parts of Scotland and is truly rugged and ready! There are many hot spots to explore including the Old Man of Storr, the Fairy Glen. I even stayed on a private island with its very own lighthouse, which was one of the coolest places I’ve ever visited and one of the most romantic places stay in Scotland.
Cairngorms National Park
This is the largest national park in the UK so it’s another popular place to visit in Scotland and it’s no surprise why. It’s absolutely beautiful and there’s so much happening at the Cairngorms National Park! While for many a chef, serving up the fanciest (最优质的) and most delicious meals is the final aim, Rudolf Brand has an extra aim: fighting food waste. He believes that with his dishes, he can have a big influence on people’s way of thinking about food and food waste.
With 22 years of experience, including Michelin-starred restaurants in London and Amsterdam, he has seen a lot of food wasted in his career. So what is the best way to stop this For him, it really comes down to one important thing: “Rather than think about what you want to cook, look at the left things, what’s available (可利用的) , and then make a menu. This is what every chef should do.”
He’s clear on his solution. “Lose that fanciness, and look at the quality of the product and the flavor (风味) ,” Rudolf explains. “There are too many chefs who are trying to make their dish too fancy. They want to have only the biggest sea fish. Or they make a dish with only the heart of the cabbage, only using the best leaves, and then they throw away the rest.” He shakes his head at the idea of such waste.
He knows that one of his suppliers—a local farm—is left with a growing food mountain when top Michelin-starred chefs only buy the prized cuts of meat instead of ordering the whole leg. In just three or four weeks, the farm is left with 1,000 legs of lamb in the freezer. “And that’s just one supplier,” he says.
While other chefs will only accept the best ingredients (原料) from their suppliers, if something is smaller or damaged or has a few black bits, Rudolf is still going to use it. “Just because I’ll accept produce of a slightly lower quality doesn’t mean I’m going to serve food of a less quality. It’s my job to turn that into good quality food on the plate,” he says. As a chef, he thinks he has a duty not only to cook delicious food, but also to reduce food waste.

Back in the 1960s, a Harvard graduate student made a great discovery about human anger. At age 34, Jean Briggs was allowed to live in an Inuit community where many Inuit families lived a traditional life.
Briggs quickly realized something unusual was going on in these families.“They never got angry with me, and even showing a bit of anger was considered weak and childlike,” Briggs said. For example, once when someone knocked a hot pot of tea across the igloo (冰屋), damaging the ice floor, no one changed their look. “Too bad,” the person just said calmly and went to refill the teapot.

After reading Briggs' book, in early December I came to the Arctic town of Iqaluit, Canada, which is an Inuit town, in search of parenting wisdom, especially when it comes to teaching children to control their feelings. Right off the plane, I started collecting data (数据).
I sat with the elders in their 80s and 90s. I talked with moms. And I attended a local parenting class. All the moms mentioned one golden rule: Don't shout or yell at small children, for it is a tradition among the Inuit to see yelling at a small child as shameful.
The elders I spoke with said colonization (殖民) over the past century is harming the tradition, so the community is working hard to keep their parenting methods. Goota Jaw, who teaches the parenting class at Nunavut Arctic College, is in the front line of this effort. “Shouting is not how we teach our children,” Jaw said. “It is just teaching them to run away.”
“When we shout at a child, we' re training the child to shout,” said author Laura Markham. “Parents who control their own anger are helping their children learn to do the same.”

The government in China’s Gansu province recently completed the building of a 3D database (数据库) to digitally (数字地) map the Great Wall in order to ensure better protection. The database contains all the information collected through advanced technology and produces 3D images of the part of the Great Wall in Shandan county.
The Great Wall parts in Gansu stretch for 3,654 kilometers. Over the past few years, the Gansu provincial cultural heritage bureau has carried out more than 30 protection projects, using digital technology as a new method. The Shandan part stretches for over 200 kilometers, which was mostly built from the Han Dynasty to the Ming Dynasty. The part in Xiakou village is the main part. “The Great Wall in Xiakou has weathered over a long period of time. It now appears to have cracking and other matters,” said Bai Yuzhang, a member of the Shandan cultural relic (遗迹) protection bureau, adding that other relics, such as ancient street buildings, have also suffered different degrees of damage.
During the past two years, the local government has carried out several projects to repair the Xiakou part and started the digitalization project in 2021. The project is arduous. The team used UAV photography and remote sensing mapping technologies to take photos of the Great Wall. Then they worked day and night to made 3D models based on data analysis. It was a difficult process but they finally overcame problems with great determination.
After more than a year of data collection and analysis, the database has been completed and the system is preparing for final acceptance. “Digitalization breaks the limitations (限制) of time and space so that all kinds of cultural relics are available (可获得的) to users. They can understand the rich historical and cultural meaning of the relics,” Bai said. “The database is not only valuable historical materials of cultural relics, but also a stepping stone to future research, protection and application of the Great Wall heritage,” he added.

Ali heard about a long distance race that was held for the boys in the city. When he learned that the third prize was a new pair of shoes, he decided to take part. He ran home excitedly and promised his sister that he would win her the new shoes.
The day of race arrived. Ali had a strong start but halfway through the race he began to get tired and his legs began to ache. Getting more and more exhausted, he thought only of Zahra and his promise to her. Dreaming of the new shoes he would win for his sister gave him strength and he stayed right behind the two fastest runners, determined to finish third. Suddenly, as the finishing line drew near, another runner collided(碰撞)with Ali from behind and he crashed to the ground.
Ali looked up and saw the other boys running ahead. Refusing to give up. He ran as fast as he could. He dashed across the finishing line and won the fourth prize. Thinking he would let his sister down, Ali couldn’t help crying. Just then, he suddenly heard the announcement from the broadcast that he won the third prize as the runner who knocked Ali down was disqualified for breaking the rule. Holding the shoes close to his chest during the award ceremony. Ali felt happy as he eventually won the shoes for his sister.

While for many a chef, serving up the fanciest (最优质的) and most delicious meals is the final aim, Rudolf Brand has an extra aim: fighting food waste. He believes that with his dishes, he can have a big influence on people’s way of thinking about food and food waste.
With 22 years of experience, including Michelin-starred restaurants in London and Amsterdam, he has seen a lot of food wasted in his career. So what is the best way to stop this For him, it really comes down to one important thing: “Rather than think about what you want to cook, look at the left things, what’s available (可利用的) , and then make a menu. This is what every chef should do.”
He’s clear on his solution. “Lose that fanciness, and look at the quality of the product and the flavor (风味) ,” Rudolf explains. “There are too many chefs who are trying to make their dish too fancy. Or they make a dish with only the heart of the cabbage, only using the best leaves, and then they throw away the rest.” He shakes his head at the idea of such waste.
He knows that one of his suppliers—a local farm—is left with a growing food mountain when top Michelin-starred chefs only buy the prized cuts of meat instead of ordering the whole leg. In just three or four weeks, the farm is left with 1,000 legs of lamb in the freezer. “And that’s just one supplier,” he says.
While other chefs will only accept the best ingredients (原料) from their suppliers, if something is smaller or damaged or has a few black bits, Rudolf is still going to use it. “Just because I’ll accept produce of a slightly lower quality doesn’t mean I’m going to serve food of a less quality. It’s my job to turn that into good quality food on the plate,” he says. As a chef, he thinks he has a duty not only to cook delicious food, but also to reduce food waste.

Back in the 1960s, a Harvard graduate student made a great discovery about human anger. At age 34, Jean Briggs was allowed to live in an Inuit community where many Inuit families lived a traditional life.
Briggs quickly realized something unusual was going on in these families.“They never got angry with me, and even showing a bit of anger was considered weak and childlike,” Briggs said. For example, once when someone knocked a hot pot of tea across the igloo (冰屋), damaging the ice floor, no one changed their look. “Too bad,” the person just said calmly and went to refill the teapot.

After reading Briggs' book, in early December I came to the Arctic town of Iqaluit, Canada, which is an Inuit town, in search of parenting wisdom, especially when it comes to teaching children to control their feelings. Right off the plane, I started collecting data (数据).
I sat with the elders in their 80s and 90s. I talked with moms. And I attended a local parenting class. All the moms mentioned one golden rule: Don't shout or yell at small children, for it is a tradition among the Inuit to see yelling at a small child as shameful.
The elders I spoke with said colonization (殖民) over the past century is harming the tradition, so the community is working hard to keep their parenting methods. Goota Jaw, who teaches the parenting class at Nunavut Arctic College, is in the front line of this effort. “Shouting is not how we teach our children,” Jaw said. “It is just teaching them to run away.”
“When we shout at a child, we' re training the child to shout,” said author Laura Markham. “Parents who control their own anger are helping their children learn to do the same.”

The government in China’s Gansu province recently completed the building of a 3D database (数据库) to digitally (数字地) map the Great Wall in order to ensure better protection. The database contains all the information collected through advanced technology and produces 3D images of the part of the Great Wall in Shandan county.
The Great Wall parts in Gansu stretch for 3,654 kilometers. Over the past few years, the Gansu provincial cultural heritage bureau has carried out more than 30 protection projects, using digital technology as a new method. The Shandan part stretches for over 200 kilometers, which was mostly built from the Han Dynasty to the Ming Dynasty. The part in Xiakou village is the main part. “The Great Wall in Xiakou has weathered over a long period of time. It now appears to have cracking and other matters,” said Bai Yuzhang, a member of the Shandan cultural relic (遗迹) protection bureau, adding that other relics, such as ancient street buildings, have also suffered different degrees of damage.
During the past two years, the local government has carried out several projects to repair the Xiakou part and started the digitalization project in 2021. The project is arduous. The team used UAV photography and remote sensing mapping technologies to take photos of the Great Wall. Then they worked day and night to made 3D models based on data analysis. It was a difficult process but they finally overcame problems with great determination.
After more than a year of data collection and analysis, the database has been completed and the system is preparing for final acceptance. “Digitalization breaks the limitations (限制) of time and space so that all kinds of cultural relics are available (可获得的) to users. They can understand the rich historical and cultural meaning of the relics,” Bai said. “The database is not only valuable historical materials of cultural relics, but also a stepping stone to future research, protection and application of the Great Wall heritage,” he added.
