“Cheese” is a word that brings joy to Pierre Brisson, the founder of France’s first cheese museum, who is passionate about the subject — not just eating it but passing on the traditional skills of cheese-making to future generations.
“It’s not an easy job but a wonderful one and there is a real risk that it could disappear,” he said. “Although people like eating it and the demand for cheese is still high, fewer youngsters want to make a career out of it.”

Brisson, 38, said his passion for cheese developed as a boy. “My father would take me to the cheese store every Sunday.” After studying at the National Dairy Industries School, Brisson set up Paroles de Fromagers to run courses in cheese-making for the public and training for professionals. He chose to locate the museum in Paris to attract the French and tourists and to avoid regional competition.
Brisson has worked with half a dozen cheese-makers to help visitors understand the art of producing different varieties from raw milk, as well as the role of bacteria, the animals and the land on which they eat.
Agathe de Saint-Exupéry will be one of the experts explaining the process, including how makers “read” the milk and how small details can affect the final product. “It’s a very individual process that depends on so many things, even the mood of the animals whose milk is being used. You can make the same good cheese every day, and every day it will taste different. It just cannot be done industrially,” she said.
Brisson said the museum would be a “little window” on country life in the heart of the capital. “My dream is that in 20 years’ time, someone will say they decide to become a cheese-maker after visiting the museum.”

Saliha Gündüz, a PhD student, has just handed over her smartphone to one of the founders of The Offline Club, who places it carefully in a “phone hotel”—a locker with dividers that holds up to 60 phones. There is something that members must follow in the evening. First, there are 45minutes of quiet time, then a 30- minute break to chat, and then further 30 minutes of time to yourself. In January, smartphones were prohibited in secondary schools across the country under government guidelines. Large- scale success stories have appeared, where the reintroduction of wildlife, such as bison, has transformed former agricultural lands into dynamic ecosystems, according to Rewilding Britain. These activities are not confined to rural areas; rewilding efforts in cities are also under way. A famous example of them is the Railroad Land Nature Reserve in Lewes, East Sussex, a 25-acre site bordered by the Ouse River and a railway line. The Railway Land Wildlife Trust is leading this innovative project, which is the first in the UK to involve dogs in rewilding efforts, as reported by The Guardian.
In Lewes, the traditional rewilding approach to letting wild animals go free is impractical. Instead, the project employs dogs as a modern-day replacement for wolves, which once played a key role in the British ecosystem before their extinction in 1760. These dogs are equipped with specially designed backpacks that spread seeds as they wander the reserve, imitating (模仿) the natural process of seed spread that wild animals would do.
The inspiration for this project came from two women in Chile who, in 2019, used dogs to plant seeds in areas destroyed by wildfires. This concept attracted project manager Dylan Walker, who decided to adapt the idea for the Lewes reserve. Local dog walkers have been enlisted to take part in the project. They pick up seed-filled backpacks from staff members before their walks, allowing the dogs to cover more ground and reach difficult-to-access areas.
