When I first moved to China in 1998, I thought I would impress my class by using some Chinese in my speech about American weddings(婚礼). I told them everyone brings a gift to the wedding for the couple. As soon as I said this, all of the students looked surprised. I knew I had said something wrong. I realized that instead of telling them that everybody brings gifts to the hun li for the couple, I had said people bring gifts for them at the li hun!
I get laughs from some of my students because I often make mistakes and my Chinese sounds strange at times. But I tell them that sometimes their English is really strange too.
One asks, “What are you like to do in your free time ” And the other answers, “I very like basketball.” I find that even good English speakers make such mistakes. The second is by far the most common mistake I have heard among Chinese English speakers. It is a result of first thinking in Chinese and then translating each word in the sentence into English. This, of course, makes some Chinese people's English sound strange.
“We should get off the car here,” a student told me. My school had asked two students to show me around the city by taxi. In English countries, we “get off” a bike, bus, or train. However, when we leave a car, we say “get out of the car”. Perhaps the student had learned “get off” means xia in Chinese and he thought the phrase(短语) could be followed by any means of transportation. To avoid such mistakes, you should take collocations(搭配) seriously. Only learning vocabulary and grammar is not enough.
Some of my students sound more like a book or machine than a human. Perhaps they have gotten used to depending on books. You can also read English books out loud or use a CD, but you need the real thing. If you have a chance to hear a native speaker from an English-speaking country, practice repeating what you hear. They can teach you how to have a conversation.

Every Friday, Ross Harrington heads for a shop to pick up deep-fried dim sim, kicking off his weekend routine. Dim sim is a variant(变体) of the traditional Chinese dumpling. Served in various ways, it's become a typical dish in Melbourne and beyond.
Australia's dim sim story began in 1942, when the Chinese-Australian businessman William Chen Wing Young realized elderly foreigners who had come to Australia to work during the gold rush were left jobless. “They were like leftovers from the gold rush period. They didn't make it back home and were too old for heavy work,” says Chen. Meanwhile, Chen noticed how popular Cantonese dim sum had become in Australia. He considered that if he could mass-produce siu mai, a steamed Chinese food, these men could sell it on food trucks.
However, siu mai differed widely from Australian words and was too much of a mouthful for Australians. Chen called it “dim sim” instead, which has the same meaning as dim sum, but in a different Canton dialect, and named the business Wing Lee. But the food wasn't popular until his son stepped in, accidentally.
“While my son was on his way to deliver takeout, he stopped by the fish and chip shop of his friend Joe and left him a box of dim sim,” Chen says. Joe decided to deep-fry it, as “that's the only way you could cook it in the fish and chip shop”. The next day, Joe rang, saying all his mates were asking where he got the dim sim. That caused Chen to make fried dim sim and develop other cooking ways. The results were an immediate hit, making Wing Lee Dim Sim the first Chinese factory to commercialize a kind of fast food for the masses.
“The dim sim is definitely typical Australian food,” says Harrington. “Besides the flavor, it reminds us we're always a country that welcomes new cultures and cuisines.”

What's your opinion on spicy food Some people cannot handle even the smallest amount of chili pepper in their dinner while others can't get enough of it.
Scientists have long been puzzled by why some people love the chili while others loathe it. Plenty of research has been done on the subject, dating back to the 1970s. Previous results showed that a love of chilies is related to childhood experiences, and that culture affects our taste too. But the latest study has found that a person's love of spicy food may be linked to his or her personality more than anything else, CBC News reported.
“We have always assumed that the liking drives intake—we eat what we like and we like what we eat. But no one has actually directly bothered to connect personality with intake of chili peppers,” said Professor John E. Hayes from Pennsylvania State University, who led the study.
But before you look at the study, you should first know that “spicy” is not a taste, unlike the sour, sweet, bitter and salty taste. It is, in fact, a burning feeling that you feel on the surface of your tongue. This gets scientists thinking that maybe a love of spicy food is brought about by people's longing for thrills, something they usually get from watching action movies or riding a roller coaster.
In the study, 97 participants, both male and female, were asked to fill out questionnaires about their personality, for example, whether they like new experiences or tend to avoid risks. They were then given a glass of water with capsaicin(辣椒素), the plant chemical that makes a chili burn, mixed into it.
By comparing the answers to the questionnaire and how participants said they felt about the spicy water, researchers found that those who tended to enjoy action movies or take risks were about six times more likely to enjoy the spicy water.
Interestingly, we used to believe that the reason why some people can withstand(承受) spicy food is that their tongues have become less sensitive to it. However, this latest study has found more. “It's not that it doesn't burn as badly, but that you actually start to like the burning feeling,” Hayes explained.
