Hello. I am Tingting. I brought my foreign friends Anna and Lisa to my favorite restaurant today. Anna had never heard of Hunan Cuisine before I introduced it to her. I told her the difference between Hunan Cuisine and Sichuan Cuisine. Hunan Cuisine is much spicier than Sichuan Cuisine. While the heat of Sichuan Cuisine comes from chillies and Sichuan peppercorns, Hunan Cuisine is often hotter, and the heat usually comes from just chillies. Since I was born in Hunan, I also shared with them why Hunan people like such food. I believe it shows they are a bold people, and hot food can help them overcome the effects of rainy or wet weather there.
I recommended some popular dishes to them, for example, the steamed fish head covered with chillies, which is quite tender with very few small bones. I also suggested the bridge tofu, which has a lighter taste. As Lisa was hungry for some pork, we ordered the red braised pork, the most famous Hunan dish. We had a wonderful meal together.

A:Thanks, Tingting. I'm very excited. I had never even heard of Hunan cuisine until you
invited us.
L:But what kind of food is Hunan cuisine exactly Is it spicy like Sichuan food
T:It's even spicier, Lisa! But the flavour is somewhat different from Sichuan cuisine. The heat in Sichuan cuisine comes from chillies and Sichuan peppercorns. Hunan cuisine is often hotter, and the heat usually comes from just chillies.
A:But why do Hunan people prefer such spicy food
T:Well, Hunan people will tell you that they like bold flavours because they are a bold people. But many Chinese people think that hot food helps them overcome the effects of rainy or wet weather, and it is often wet in Hunan as well as in other places in the south, such as Sichuan and Chongqing.
L:So what shall we order
T: I recommend the steamed fish head covered with chillies. I know fish head may sound strange, but the meat is quite tender and there are very few small bones, so everyone loves it.
L: OK. And what's this here: dry pot duck with golden buns
T:It's duck stir-fried with garlic, ginger, and black bean paste, and it has some bread with it. It's quite good, but I suggest the bridge tofu instead, as it has a lighter taste.
L:Yes. let's order that.
T: Now, what else would you like to eat, Lisa
L: I'm really hungry for some pork.
T:Well, then you should have the red braised pork. It's the most famous Hunan dish.
A:Why is that
