The Chinese pancake, or jianbing, is one of the most common breakfast foods in northern China, usually filled with ingredients (食材) like vegetables, eggs and chilli paste. On a video-sharing platform, French chef Corent in Delcroix's video of creating his own type of jianbing has been viewed about 250,000 times. But just how does his type differ It is packed with cheese, ham, pickle (腌菜) and black truffle mayonnaise(黑松露蛋黄酱)—ingredients typically found in French pancakes, which Delcroix says aren't all that different to Chinese pancakes.
Deleroix's addiction to Chinese cuisine started in 2002 when he was studying in Beijing. "The first Chinese dish 1 learnt to cook was scrambled eggs with tomatoes. But my favourites are cooked wheat-based foods such as jiaozi and xiaolongbao," says Delcroix. After learning how to prepare some of the popular local dishes, Delcroix decided to share his favourite Chinese and French dishes on social media. And many of his videos show him preparing dishes that marry elements of both cuisines.
But this effort is not just about self-improvement—Delcroix says he has also managed to learn more about Chinese cuisine through the comments that he receives from his viewers. "It is through the viewers that I get to learn how to create truly local dishes. The feedback (反馈) is faster and more direct than that from the market," Delcroix says.
Delcroix is presently a chef and a food blogger who has millions of followers on Chinese social media platforms. Despite having learnt so much about Chinese cuisine over the years, Delcroix is still hungry for more knowledge.
Looking ahead, he wants to do more to spread Chinese cuisine to people overseas. "I always feel that there might be cultural barriers when Chinese chefs introduce their local cuisine to foreigners. It might be much easier for a foreigner to explain," he says. "I want to be that bridge."

When plates are set on the table, phones, rather than forks, are at the ready. At this point in our social media entanglement (纠缠), the fact that the camera eats first is pretty much a given. Sure, some chefs, including Michelin-starred chefs, express their displeasure at this, but efforts to make the table a screen-free domain have mostly fallen flat.
New research from Aston University has found that people are indeed influenced by the food photos that their friends post on social media. Study author Lily Hawkins said, "The implication is that we can use social media as a tool to 'nudge' each other's eating behaviour within friendship groups, and use this knowledge as a tool for public health interventions."
Actually, the daily food situation is somewhat different from everything else posted on social media. People desire to copy what they see but they need good social media literacy skills in order to grasp what's realistic and what's absurd. It is necessary to avoid the fake perfection of social media.
