My wife Gillian and I started convincing ourselves to buy the farm as soon as we got in the car. Over the years we have become experts in talking ourselves into things that normal people would think crazy, both of us having developed a deep knowledge of each other’s craziest buttons, and how best to push them. Gillian and I are very different in many ways, but we both have the ability to drop everything and take a chance. Unfortunately, we also have the ability to view buying a poor farm as an opportunity.
The main block was financial. We simply couldn’t afford the $350, 000 asking price. It took us a couple of days to think our way around this obstacle. We eventually came up with a strategy: we would put in a lowball (低报价) offer and we would move to the farm. That would allow us to rent out our apartment in Toronto, freeing up cash to make mortgage payments (按揭贷款) on the farm. But I didn’t think the owner would accept less than his asking price. We wrote up the offer, convinced the owner would say no.
A few days later, I was walking to the office, and had almost completely forgotten about our stupid attempt to buy a farm. My phone rang. It was Gillian. “We got it,” she said. I stopped in the middle of the street, speechless.
As I went home that night, I started to feel that moving to the farm was meant to be. I had recently found myself looking around at the people sitting silently on the subway or walking hurriedly in and-out of the office and asking myself, “What’s the point ” I realized that the times I was the most happy were the times when I was not sitting at a desk, when I was outside the city.
It didn’t matter where I was; I loved to get dirty, to do things. But I had come to suppress (抑制) that side of me. Finally I changed my view and decided to leave the city and move to the farm.

Farming is damaging the planet But there could be a much more environmentally friendly way to feed ourselves: using renewable energy to turn carbon dioxide (CO ) into food.
“This is becoming a reality,” says Pasi Vainikka at Solar Foods. The company is building the first working factory, near Helsinki in Finland, which will be able to make food directly from CO . It will produce 100 tonnes per year, enough for 4 or 5 million meals, he says. “We are a bit behind schedule, but production may start just about in 2023,” says Vainikka.
At the factory, renewable electricity will be used to produce hydrogen and oxygen from water. The hydrogen will be added to large containers, where the bacteria grow. Some of the CO will, be caught directly from the air at a visitor centre at the factory, Vainikka says, and the rest will come from industrial sources. The end result will be a yellow powder called Solein that is made of bacterial cells and is up to 70 percent protein. It can be used as an ingredient in all kinds of foods, from meat alternatives to snacks.
Solein was approved as a food ingredient in Singapore in October2022, and Solar Foods is awaiting approval in the UK, the European Union and the US.
Compared with plant crops, Solein will use 100 times less water per kilogram of protein produced, 20 times less land and give off a fifth as much CO , according to Solar pared with beef, a kilogram of protein can be produced using 600 times less water and 200 times less land while giving off 200 times less CO , says the company. There are other benefits, too: factories could be situated anywhere in the world and production won’t be affected by weather extremes.
“With Solar Foods and other companies expanding their systems, this is truly introducing a new era of agriculture,” says Dorian Leger at Connectomix Bio in Germany. “I think these trends are exciting and will help improve global food security while reducing carbon output.”
