Organic food first became popular because many people were worried about the amount of chemicals used to grow the food they ate, as well as the effect of the farming industry on the environment. Different countries have different ideas about ‘organic food’, but in general, farmers do not use chemical pesticides (农药) and fertilizers (化肥). Organic farmers don’t feed any chemicals to farm animals to make the meat fatter and tastier. They also do not grow genetically modified crops. Globally, the sales of organic food have grown steadily every year since the early 1990s. There are several reasons why organic food has become popular.
· People feel that food grown without chemicals is healthier.
· Food bought from local organic farmers, rather than transported long distances, means less pollution from green house gases.
· Farmers are able to get better prices by selling their crops directly, which helps them to pay for the extra costs of growing food organically (有机地).
· Many people say that organic food tastes better!
Organic food was originally sold close to the farm where it was grown. This reduced the environmental impact of transporting it. Farmers would bring their crops to a local market or use vans to drive around local places delivering food. Today, not all organic food is grown locally. Many supermarkets now import it from abroad. The environmental benefits of selling food close to where it is grown are now being lost, even in the organic market.
There are many ways in which you can support the organic food industry, and help the environment:
· You can buy local, rather than imported, organic food from your market.
· You can buy food directly from a farmer.
· Or you can cycle or travel on a bus to buy your organic food instead of driving your car.

The garden that the 22-year-old aircraft engineer, Sijo Zachariah, and his father planted was a way to make sure their family had food to eat during the coronavirus pandemic (冠状病毒大流行). But the garden became much more.
“What’s going to happen ” he thought. “You know, how are we going to feed ourselves ” Food stores in the area were nearly empty. Places that sold plants for gardening were closed. So, Zachariah and his father collected seeds from whatever fruits and vegetables they could find and planted them on their family’s land. Kerala’s climate is tropical. That means it has a lot of rain and sun, making farming easier.
Over time, the garden would help feed twenty other families during the pandemic. “We started teaching others how to grow their own crops so that everyone can have some sort of crop growing in the land,” he said.
Zachariah became interested in permaculture—a movement that says farming should work with nature instead of trying to control the land. In the past, Zachariah had studied and worked in Wales in Britain. He wondered why the food he ate in Wales was better than the food he ate at home. Zachariah came to understand that the food was fresher. It came from local farms and was not treated with chemicals before traveling by truck or plane to be sold far away.
Zachariah is now considering a new profession: farming. He connected with other people online who are thinking of a future in farming as well. “It’s a big change for me. But this is what makes me happy—helping others and being in nature,” he said.
There is one more reason he was happy with his farming life. “I was getting quality time with my dad as well, so it was like a win-win,” he said.

Ice cream is especially popular in the United States. In fact, Americans eat more ice cream than people in any other country. Ice cream is a frozen treat that comes in hundreds of flavours. Making ice cream is pretty simple. It’s usually made from milk, cream, sugar, and flavourings (调味品). Mix it all together as you freeze it and you get ice cream. As the mixture begins to freeze you can then add fruit, nuts, or chocolate. Soft ice cream is just the ice cream that isn’t fully frozen yet. Some people make ice cream at home in an ice cream mixer, a special kind of home freezer. But nearly all ice cream produced today is made by machines in ice cream factories.
There are many other popular frozen desserts that are similar to ice cream. Sherbet is made from fruit syrup (糖浆) that has milk or egg white added to it. Spumoni is an ice cream with fruits and nuts. Ice milk, also called low-fat ice cream, is a sweetened frozen food made of skim milk.
You can even get ice cream made without milk or cream. Soy ice cream and rice ice cream are made without dairy products. They’re made using soybean milk or rice milk instead.
Ice cream comes in countless flavours. You’ve probably eaten vanilla and chocolate ice cream. Other favourites include strawberry, cherry, peach, butter pecan, and chocolate mint. But have you ever eaten ice cream flavoured with garlic or green tea Some people do. You can even buy ice cream flavoured with rose petals!

What would you like to eat In fact people in different parts of the world have very different ideas about what is good to eat or drink. If you were an Eskimo in the North Pole, you would enjoy the raw meat from seals. If you live in the desert, you would prefer the roasted meat of sheep and goats. Americans cook the meat of many different animals. Perhaps their favorite meat is steak. Americans also eat a lot of chicken as well as fish, or other food from the sea. Some people in India do not eat fish or meat at all.
Among the most popular hot drinks are coffee and tea. Coffee is popular in Northern Europe and in the Middle East. Some people put cream and sugar in the coffee. But in the United States, many people drink their coffee black that is without cream or sugar. Tea is the national drink in China. In the East, people drink tea without sugar. But in England where it is almost a national drink, many people use both sugar and hot or cold milk in their tea, and others use lemons.
