Chinese culture covers quite different kinds of things. It’s very old and has deep meaning Food culture plays an important part in it. Different places in China have their own special foods. Chongqing is a great city in China and it has a very famous food—Chongqing Hot Pot.
Chongqing Hot Pot appeared in Chongqing a long time ago. And it dates back in the late Qing Dynasty. The hot pot is really special. It has a spicy and numbing (麻的) taste. The bottom of the pot is made by boiling things like peppers, Chinese prickly ash (花椒) and beef tallow (牛油). Peppers make it spicy, Chinese prickly ash makes it numbing and beef tallow makes the taste nice and thick. There are so many things you can put in the hot pot, like tripe, duck intestine, aorta, beef and vegetables. People sit around the hot, steaming pot and put these things into the boiling pot to cook. For example, people usually cook the tripe (牛肚) by moving it up and down in the pot about seven to eight times. Then it becomes really crispy and yummy. The duck intestine (鸭肠) will curl up (蜷缩) after cooking for a few seconds and it tastes really fresh and crispy, too.

Since tea spread from China worldwide, it has become one of the most popular drinks in the world. Different countries have their own tea cultures, like afternoon tea in England.
The tradition of afternoon tea is a very special part of English culture. The custom of drinking tea became popular in England during the 1660s. It was not until the mid-19th century that the idea of “afternoon tea” first appeared.
Afternoon tea is served in the mid-afternoon, between lunch and a late dinner. The idea came from Anna, the seventh Duchess (公爵夫人) of Bedford, in 1840. At the time, many families would eat a late dinner at about 8 pm, which was one of only two main meals each day, and the other was a mid-morning meal.
With a long time between breakfast and dinner, Anna would become hungry around 4 o’clock in the afternoon. So she asked some tea, bread, butter and cakes to be brought to her room during the late afternoon. This became a habit of hers and she began inviting friends to join her.
Later, Anna continued it, sending cards to her friends asking them to join her for “tea and a walking in the fields”.
Others soon picked up on (注意到) the idea. By the 1880s, afternoon tea became an event for many ladies. They would be dressed beautifully to be served in the sitting room between four and five o’clock, talking about the latest news, their daily life and fashion.
Today’s afternoon tea is simpler than traditional afternoon tea. It is just a biscuit or small cake and a cup of tea. However, there is one thing that has never changed—the meaning of afternoon tea.

British people are big tea drinkers. It is a tradition in Britain to drink tea for many reasons. People enjoy it at breakfast, during visits with friends, and on tea breaks at work. People even “have a cuppa” when they talk about their personal problems. But the biggest reason for drinking tea is to relax.
Recently, a research from the Tea Group shows that more people would like to choose fruit and other teas over traditional English breakfast tea. Researchers did a survey of more than 2, 000 tea lovers. Over 50% of people said their favorite tea was not the traditional one. Over 20% of people chose green tea as their favorite tea. Just over 20% said English breakfast tea was their first choice.
Sales of traditional tea in the UK are declining (下降) during these years. Three years ago, a survey found that English breakfast tea was the preferred (更喜欢的) choice for 54% of British people. But the new research shows a declining interest in this traditional tea.
The researchers also found other interesting facts about tea-drinking habits (习惯) in the UK.
The British seem to love milky and sugary tea. Around 85% of people who drink English breakfast tea would like to put milk in it. About 45% of people sweeten their tea with sugar, and interestingly, those with a sweet tooth put as much as three teaspoons of sugar in their cup.
