My dad has watermelon-size muscles and enormous hands. He doesn’t seem like the kind of person who bakes great bread, but he does. Every Saturday he bakes silently by himself. The rest of the week, he’s a car mechanic whose job involves complex lifting, tightening, shaking and hitting. People tend to think of cars as metallic (金属的) members of the family, and Dad seldom lets them down.
I kind of understand Dad’s baking routine. Though he’s into the work, customers’ expectation and heavy work weigh him down. When working on the dough, he returns to a life of ease.
I had been feeling stressed out myself since I didn’t qualify for the swim team. I thought Dad had found that and he asked me to help and headed to the kitchen.
Though I was surprised, I followed him. Dad took out his mixing bowl, telling me to mix ingredients
while he added them. Then he showed me how to process the dough—repeatedly stretching, pounding and folding it. It took ten minutes and a surprising amount of energy to finish. But what came next was harder and more surprising—doing nothing. We put the dough back into the bowl. It took an hour to rise. Then we pressed and stretched it, put it into pans and waited another hour for it to double. “It’s hard to resist putting the dough directly into the oven, but if you do, the bread will be tough,” Dad explained.
When the dough rose at its own pace, time seemed to slow down. We could do nothing to speed that. As I accepted that, I stopped watching the clock and started enjoying the time. My father taught me how to bake, but I learned something more—appreciate the slow pace of time and let the bread rise.

Climate change is reshaping the U.S., as journalist Jake Bittle explains in his new book, The Great Displacement: “Each passing year brings disasters that destroy new parts of the United States, and these disasters alter the course of human lives, pushing people from one place to another, destroying old communities and forcing new ones to appear.”
The first section of Bittle’s book focuses on the Florida Keys. Bittle profiles Patrick Garvey, who bought a neglected grove (疏于打理的小树林) on Big Pine Key, and fixed it up into “a real community resource” that grew fruits rare in the continental U.S. Then came Hurricane Irma. Patrick and some friends decided to stay on the island during the storm, and ended up sheltering at a nearby school. They survived, but the grove wasn’t so lucky.
Patrick’s story is a heartbreaking one. Bittle strikes a discouraging note about the future of the Keys’ ability to sustain human life. “Many of the islands in the archipelago (群岛),perhaps all of them, could go underwater altogether by the end of this century,” he writes. Some Keys residents decided to stay after Irma; others, unable to bear the thought of going through that kind of suffering again, left.
In his book, Bittle covers the people whose lives have been influenced by climate change with real sympathy. He takes a deep dive into the factors that go into people’s decisions to stay or to leave once their neighborhoods have been affected by climate change, explaining why economic inequality makes many people unable to relocate, even if it was easy for them to simply pack up and leave behind the places where they’ve spent their whole lives. He’s an emotional writer, but also one with a real gift for explaining the tough issues—economic, scientific and political—that make the climate crisis and its effect on the population so complex.
Climate change is affecting not only the U.S., but the whole world, and if you are dying for more on the situation, this book really is a must-read.

History is written, read and told, but rarely ever is it smelled.
Historians and scientists across Europe have now gotten together with perfumers (调香师) and museums for a unique project: to reveal what Europe smelled like between the 16th and early 20th centuries. A European street today may smell like coffee, fresh-baked bread and cigarettes. But what did it smell like hundreds of years ago As part of this three-year-long project called “Odeuropa”, the researchers want to find all the old scents of Europe, and even recreate some of this ancient smellscape: from the dry tobacco scents to the smelly canals.
To do this, they will first build artificial intelligence (AI) that will be trained to go through historical texts, written in seven different languages, for any descriptions of scents. The AI will also be trained to detect images of objects in the texts that might be scented. The team will then use this information to create an online encyclopedia (百科全书) of smells from Europe’s past.
The encyclopedia will include the meaning of certain scents and will trace the stories behind scents, places and related practices, according to project leader Angela Lee. “This database will become a library for the smell heritage of Europe, enabling future generations to access and learn about the scented past.” The encyclopedia will also include descriptions of people for whom smell was important.
The researchers will then work with chemists and perfume makers to recreate past smells and figure out how to display the smells in museums and other historical sites. With current technology, almost every scent can be produced. “The more difficult part of the project will be to find descriptions of scents, because people haven’t always talked or written about them,” Lee said.
Scent plays a central role in our everyday life, even acting as a powerful time machine into our own past with its ability to activate long-forgotten memories. But it’s also a key tool in telling the stories of others. “Scent gives us access to the past in a much more direct and emotional way than language and images,” Lee said.
