(2025·全国·模拟预测)A few years ago, food scientist Sara Marquart came across an astonishing fact: over half of the world’s cocoa beans (可可豆) are sourced from Ivory Coast and Ghana, two African countries that are increasingly affected by climate change. Last year, these two countries received record rainfall prior to the autumn cocoa harvest, leading to tree infections and cocoa fruit decomposition. As a result, the global cocoa supply decreased significantly, causing a dramatic threefold rise in cocoa prices within a year.
This set the stage for the initiation of Planet A Foods by Sara and her brother, Max Marquart, both of whom are devoted chocolate lovers. The company’s scientists have been working on a chocolate alternative for the past three years. Making a food that looks like, feels like and tastes like chocolate — but isn’t chocolate — takes time.
Food scientist Anna-Lena Krug estimates that the team adjusted their recipe 700 to 800 times before arriving at what they call ChoViva, an alternative that abandons the cocoa bean. “If you’ve ever had the chance to try a raw cocoa bean, you will realize that there is almost no congruence in the smell of raw cocoa beans and conventional chocolate,” Krug says. That’s because chocolate’s pleasant smell forms during the fermentation (发酵) and roasting of the cocoa bean.
The team tried fermenting and roasting more than a hundred other materials until they settled on oats (燕麦) and sunflower seeds. After months of error, the team sent their chocolate alternative to taste-testers, receiving surprisingly positive feedback. The goal for ChoViva isn’t to replace chocolate entirely, but to replace chocolate in applications where it’s merely a part in a larger product.
