Cooking with steam is of great importance in Chinese cuisine. It's one of the best ways to lock the original flavors in the ingredients.
Vegetables are healthy and full of fiber, and steaming is a quick way to cook them without using much oil. Chinese cabbage is a perfect vegetable to steam: crunchy, tender, less fibrous and mildly sweet. The tender cabbage can be steamed directly with a simple sauce consisting of garlic paste, soy sauce and sugar. Root vegetables like sweet potatoes are also great for steaming. They can be cut into thick sticks or slices and then steamed until the center becomes soft. Thin pieces of carrots, fresh sophora flowers (槐花) can be coated with dry flour and then steamed. This quick dish is usually served with a garlic paste and vinegar sauce.
Steaming fish, shrimp and crabs, is all about preserving the original taste, so freshness is the absolute No. 1 rule when we shop for seafood to be steamed For fine foods from a river, lake or sea, they must be freshly caught the day you buy them. Frozen fish is seldom steamed directly, because there can be a stronger fishy smell and taste. With all the internal organs and scales removed and blood cleaned, the fish is packed with slices of ginger and scallions (姜和葱) that can neutralize the fishiness. It's then placed in a steamer that has been preheated to boil, and cooked for 8 to 10 minutes depending on the size of the fish. The final step is to place scallions on top of the steamed fish. Then, in a small pot, heat up some oil and pour it across the body of the fish to help the flavor release. Next, drizzle (浇) a couple of spoons of seasoned soy sauce for seafood around the plate and serve. When eating the fish, it's best to dip it in the sauce for the sweet taste.

Music filled the silence of the practice room. Our teacher made the dance look so easy when she was demonstrating it herself. Her movements flowed naturally with the rhythm of the music. Her eyes filled with confidence while she looked at herself in the mirror. Her dancing appealed to me.
Finishing the demonstration, she told us, "It's your time to shine!" Over the course of four months, we practiced week after week as we prepared for our final performance: a real performance with an actual audience. That thought of standing onstage in front of a cheering crowd gave me instant stage fright.

More than 2,200 years ago, a battle between the Romans and the Carthaginians took place at sea off northwestern Sicily. Rome was victorious, defeating the other military ships and ending the war. While so much was destroyed at the time, scientists have recently discovered a shipwreck that was sunk in the battle with at least 114 animal species living on the ship's ram (夯锤).
The ram's discovery is an important archaeological discovery. But finding it to be a host for so much underwater life also provides great insight for scientists studying how marine animals colonize (聚居) empty sites and slowly create diverse and rich communities there.
The ram was recovered in 2017, located between 75 and 90 metres deep. It's bronze and hollow, allowing it to accumulate (积累) sea creatures both inside and outside. Several years later the ram was cleaned and restored by researchers. All the marine animals found inside and outside the ram were collected, along with blocks of sediment (沉积物) and hardened materials from the same area.
Scientists have been working to compare the species found in and around the ram with those found in similar Mediterranean habitats. They reconstructed how it had likely been colonized. "We conclude that the primary 'constructors' in this community are organisms which attach themselves directly to the wreck's surface," said Edoardo Casoli from Sapienza University of Rome. "Then there are 'habitants' which aren't attached but move freely between empty spaces in the superstructure. What we don't yet know exactly is the order in which these organisms colonize wrecks."
"Younger shipwrecks (遇难船只) typically host a less diverse community than their environment," said Maria Flavia Gravina, another researcher. "By comparison, our ram is much more representative of the natural habitat. It can act as a novel kind of sampling tool for scientists, which effectively acts as an 'ecological memory' of colonization."

He insisted on going to school every day. Though faced with the most challenging event of my life, he is full of courage and confidence. With the generous help of his teacher, friends and his children, he has made huge progress in my studies. Now he is never shy about admitting the truth that once he was not able to read and write at all. Besides, he is eager to encourage more elderly people to attend the adult education classes, because it's never too late to learn.
