Scientists have created the first lab-grown coffee, which they say “smells and tastes like the real thing”. The Finland-based researchers used a process called cellular agriculture, which includes taking out cells from a small plant or animal sample (样本). In the latest example of lab-grown options, cell samples were taken from Arabica, a popular coffee plant that makes up 56 per cent of global production. With lab-grown coffee, the researchers say that they can deal with problems facing the global coffee industry, such as a need for clearing space for coffee plants to keep up with an increasing need for the drink worldwide.
The research is being conducted at VTT Technical Research Centre based in Espoo, Finland—the country that drinks the most coffee per person. “The process uses real coffee plant cells,” Dr Heiko Rischer, head of plant biotechnology at Finland's VTT research center, said. “At first, a cell culture (细胞培养) is started from a plant part, for example, a leaf. The formed cells reproduced on a specific nutrient medium. In the end, the cells are transported to a bioreactor from which the biomass (生物量) is then harvested. The cells are dried and roasted then coffee can be brewed.”
The first collection produced by VTT in their laboratory smells and tastes like traditional coffee, according to the results of a “sensory analysis (感官分析)”. After drinking a cup, Dr Rischer said, “There is a surprisingly full smell. In terms of smell and taste, our trained sensory judgement and analytical examination has found the coffee bears similarity to ordinary coffee,” he said. “The experience of drinking the very first cup was exciting.”
The idea that coffee cells could be used to make coffee was presented back in 1974 by plant scientist P. M. Townsley. But the VTT scientists have put the theory into practice with their lab-grown brew, which they think could hit the market.

Organic food, grown without artificial chemicals, is increasingly popular nowadays. Consumers have been willing to pay up to twice as much for goods with organic labels. However, if you think paying a little more for organic food gets you a more nutritious and safer product, you might want to save your money. A study led by researchers at Stanford University says that organic products aren't necessarily more nutritious, and they're no less likely to suffer from disease-causing bacteria, either.
The latest results, published in the Annuals of Internal Medicine, suggest that buyers may be wasting their money. “We did not find strong evidence that organic food is more nutritious or healthier,” says Dr Crystal Smith-Spangler from Stanford. “So, consumers shouldn't assume that one type of food has a lower risk or is safer.”
For their new study, Smith-Spangler and her colleagues conducted a review of two categories of research, including 17 studies that compared health outcomes between consumers of organic against traditional food products, and 223 studies that analyzed the nutritional content of the foods, including key vitamins, minerals and fats.
While the researchers found little difference in nutritional content, they did find that organic fruit and vegetables were 20% less likely to have chemicals remaining on the surfaces. Neither organic nor traditional foods showed levels of chemicals high enough to go beyond food safety standards. And both organic and traditional meats, such as chicken and pork, were equally likely to be harmed by bacteria at very low rates. The researchers did find that organic milk and chicken contained higher levels of omega-3 fatty acids, a healthy fat also found in fish that can reduce the risk of heart disease. However, these nutritional differences were too small, and the researchers were unwilling to make much of them until further studies confirm the trends.
Organic food is produced with fewer chemicals and more natural-growing practices, but that doesn't always translate into a more nutritious or healthier product. The US Department of Agriculture (USDA) states that “whether you buy organic food or not, finding the freshest foods available may have the biggest effect on taste.” Fresh food is at least as good as anything marketed as organic.

Mr Asada is just one of many growers in Shizuoka, one of Japan's largest wasabi growing (山葵种植) regions, who must face rising challenges from global warming and the effect of untended forests. Already, these hazards have gradually weakened the centuries old culture of wasabi in the area and damaged the future of one of the area's most important agricultural products and its tourism business.
Over the last decade, the number of wasabi produced in Shizuoka has dropped by close to 55 percent, according to the Department of Agriculture, Forestry and Fisheries. The wasabi that comes in tubes and packets is actually a mixture of wasabi and horseradish (辣根)—or includes no wasabi at all. These days, almost only expensive restaurants have access to fresh wasabi, giving their customers a chance to experience the unique flavor and traditional culture of wasabi.
Wasabi plants grow up in spring water that flows down from the mountains, helping to improve their flavor and sweetness. Over time, local growers say, the spring water has worsened in quality due to a large number of cypress trees which grow like crazy in the untended forests.
Global warming has upset the balance even further. The delicate wasabi plants, which take more than a year to be full grown, do best in conditions no higher than about 70 degrees Fahrenheit. In recent years, heat waves in Japan have regularly pushed temperatures into the 90 degrees and even above 100 degrees, causing more stems to rot.
Government researchers and local growers have started to experiment with crossbreeding in an effort to develop better wasabi varieties that will grow strong even in the rising heat. The challenge is that, unlike with other crops such as cucumbers or tomatoes, getting seeds and growing seedlings from wasabi requires advanced technology. Most growers rely on specialized companies to clone seedlings in labs and greenhouses. Crossbreeding new varieties needs difficult pollination (授粉) efforts, and most of all time.

Scientists have created the first lab-grown coffee, which they say “smells and tastes like the real thing”. The Finland-based researchers used a process called cellular agriculture, which includes taking out cells from a small plant or animal sample (样本). In the latest example of lab-grown options, cell samples were taken from Arabica, a popular coffee plant that makes up 56 per cent of global production. With lab-grown coffee, the researchers say that they can deal with problems facing the global coffee industry, such as a need for clearing space for coffee plants to keep up with an increasing need for the drink worldwide.
The research is being conducted at VTT Technical Research Centre based in Espoo, Finland—the country that drinks the most coffee per person. “The process uses real coffee plant cells,” Dr Heiko Rischer, head of plant biotechnology at Finland's VTT research center, said. “At first, a cell culture (细胞培养) is started from a plant part, for example, a leaf. The formed cells reproduced on a specific nutrient medium. In the end, the cells are transported to a bioreactor from which the biomass (生物量) is then harvested. The cells are dried and roasted then coffee can be brewed.”
The first collection produced by VTT in their laboratory smells and tastes like traditional coffee, according to the results of a “sensory analysis (感官分析)”. After drinking a cup, Dr Rischer said, “There is a surprisingly full smell. In terms of smell and taste, our trained sensory judgement and analytical examination has found the coffee bears similarity to ordinary coffee,” he said. “The experience of drinking the very first cup was exciting.”

Organic food, grown without artificial chemicals, is increasingly popular nowadays. Consumers have been willing to pay up to twice as much for goods with organic labels. However, if you think paying a little more for organic food gets you a more nutritious and safer product, you might want to save your money. A study led by researchers at Stanford University says that organic products aren't necessarily more nutritious, and they're no less likely to suffer from disease-causing bacteria, either.
The latest results, published in the Annuals of Internal Medicine, suggest that buyers may be wasting their money. “We did not find strong evidence that organic food is more nutritious or healthier,” says Dr Crystal Smith-Spangler from Stanford. “So, consumers shouldn't assume that one type of food has a lower risk or is safer.”
For their new study, Smith-Spangler and her colleagues conducted a review of two categories of research, including 17 studies that compared health outcomes between consumers of organic against traditional food products, and 223 studies that analyzed the nutritional content of the foods, including key vitamins, minerals and fats.
While the researchers found little difference in nutritional content, they did find that organic fruit and vegetables were 20% less likely to have chemicals remaining on the surfaces. Neither organic nor traditional foods showed levels of chemicals high enough to go beyond food safety standards. And both organic and traditional meats, such as chicken and pork, were equally likely to be harmed by bacteria at very low rates. The researchers did find that organic milk and chicken contained higher levels of omega-3 fatty acids, a healthy fat also found in fish that can reduce the risk of heart disease. However, these nutritional differences were too small, and the researchers were unwilling to make much of them until further studies confirm the trends.
Organic food is produced with fewer chemicals and more natural-growing practices, but that doesn't always translate into a more nutritious or healthier product. The US Department of Agriculture (USDA) states that “whether you buy organic food or not, finding the freshest foods available may have the biggest effect on taste.” Fresh food is at least as good as anything marketed as organic.

Mr Asada is just one of many growers in Shizuoka, one of Japan's largest wasabi growing (山葵种植) regions, who must face rising challenges from global warming and the effect of untended forests. Already, these hazards have gradually weakened the centuries old culture of wasabi in the area and damaged the future of one of the area's most important agricultural products and its tourism business.
Over the last decade, the number of wasabi produced in Shizuoka has dropped by close to 55 percent, according to the Department of Agriculture, Forestry and Fisheries. The wasabi that comes in tubes and packets is actually a mixture of wasabi and horseradish (辣根)—or includes no wasabi at all. These days, almost only expensive restaurants have access to fresh wasabi, giving their customers a chance to experience the unique flavor and traditional culture of wasabi.
Wasabi plants grow up in spring water that flows down from the mountains, helping to improve their flavor and sweetness. Over time, local growers say, the spring water has worsened in quality due to a large number of cypress trees which grow like crazy in the untended forests.
Global warming has upset the balance even further. The delicate wasabi plants, which take more than a year to be full grown, do best in conditions no higher than about 70 degrees Fahrenheit. In recent years, heat waves in Japan have regularly pushed temperatures into the 90 degrees and even above 100 degrees, causing more stems to rot.
Government researchers and local growers have started to experiment with crossbreeding in an effort to develop better wasabi varieties that will grow strong even in the rising heat. The challenge is that, unlike with other crops such as cucumbers or tomatoes, getting seeds and growing seedlings from wasabi requires advanced technology. Most growers rely on specialized companies to clone seedlings in labs and greenhouses. Crossbreeding new varieties needs difficult pollination (授粉) efforts, and most of all time.

Scientists have created the first lab-grown coffee, which they say “smells and tastes like the real thing”. The Finland-based researchers used a process called cellular agriculture, which includes taking out cells from a small plant or animal sample (样本). In the latest example of lab-grown options, cell samples were taken from Arabica, a popular coffee plant that makes up 56 per cent of global production. With lab-grown coffee, the researchers say that they can deal with problems facing the global coffee industry, such as a need for clearing space for coffee plants to keep up with an increasing need for the drink worldwide.
The research is being conducted at VTT Technical Research Centre based in Espoo, Finland—the country that drinks the most coffee per person. “The process uses real coffee plant cells,” Dr Heiko Rischer, head of plant biotechnology at Finland's VTT research center, said. “At first, a cell culture (细胞培养) is started from a plant part, for example, a leaf. The formed cells reproduced on a specific nutrient medium. In the end, the cells are transported to a bioreactor from which the biomass (生物量) is then harvested. The cells are dried and roasted then coffee can be brewed.”
The first collection produced by VTT in their laboratory smells and tastes like traditional coffee, according to the results of a “sensory analysis (感官分析)”. After drinking a cup, Dr Rischer said, “There is a surprisingly full smell. In terms of smell and taste, our trained sensory judgement and analytical examination has found the coffee bears similarity to ordinary coffee,” he said. “The experience of drinking the very first cup was exciting.”
The idea that coffee cells could be used to make coffee was presented back in 1974 by plant scientist P. M. Townsley. But the VTT scientists have put the theory into practice with their lab-grown brew, which they think could hit the market.

Organic food, grown without artificial chemicals, is increasingly popular nowadays. Consumers have been willing to pay up to twice as much for goods with organic labels. However, if you think paying a little more for organic food gets you a more nutritious and safer product, you might want to save your money. A study led by researchers at Stanford University says that organic products aren't necessarily more nutritious, and they're no less likely to suffer from disease-causing bacteria, either.
The latest results, published in the Annuals of Internal Medicine, suggest that buyers may be wasting their money. “We did not find strong evidence that organic food is more nutritious or healthier,” says Dr Crystal Smith-Spangler from Stanford. “So, consumers shouldn't assume that one type of food has a lower risk or is safer.”
For their new study, Smith-Spangler and her colleagues conducted a review of two categories of research, including 17 studies that compared health outcomes between consumers of organic against traditional food products, and 223 studies that analyzed the nutritional content of the foods, including key vitamins, minerals and fats.
While the researchers found little difference in nutritional content, they did find that organic fruit and vegetables were 20% less likely to have chemicals remaining on the surfaces. Neither organic nor traditional foods showed levels of chemicals high enough to go beyond food safety standards. And both organic and traditional meats, such as chicken and pork, were equally likely to be harmed by bacteria at very low rates. The researchers did find that organic milk and chicken contained higher levels of omega-3 fatty acids, a healthy fat also found in fish that can reduce the risk of heart disease. However, these nutritional differences were too small, and the researchers were unwilling to make much of them until further studies confirm the trends.
Organic food is produced with fewer chemicals and more natural-growing practices, but that doesn't always translate into a more nutritious or healthier product. The US Department of Agriculture (USDA) states that “whether you buy organic food or not, finding the freshest foods available may have the biggest effect on taste.” Fresh food is at least as good as anything marketed as organic.

Already, these hazards have gradually weakened the centuries old culture of wasabi in the area and damaged the future of one of the area's most important agricultural products and its tourism business.
Over the last decade, the number of wasabi produced in Shizuoka has dropped by close to 55 percent, according to the Department of Agriculture, Forestry and Fisheries. The wasabi that comes in tubes and packets is actually a mixture of wasabi and horseradish (辣根)—or includes no wasabi at all. These days, almost only expensive restaurants have access to fresh wasabi, giving their customers a chance to experience the unique flavor and traditional culture of wasabi.
Wasabi plants grow up in spring water that flows down from the mountains, helping to improve their flavor and sweetness. Over time, local growers say, the spring water has worsened in quality due to a large number of cypress trees which grow like crazy in the untended forests.
Global warming has upset the balance even further. The delicate wasabi plants, which take more than a year to be full grown, do best in conditions no higher than about 70 degrees Fahrenheit. In recent years, heat waves in Japan have regularly pushed temperatures into the 90 degrees and even above 100 degrees, causing more stems to rot.
Government researchers and local growers have started to experiment with crossbreeding in an effort to develop better wasabi varieties that will grow strong even in the rising heat. The challenge is that, unlike with other crops such as cucumbers or tomatoes, getting seeds and growing seedlings from wasabi requires advanced technology. Most growers rely on specialized companies to clone seedlings in labs and greenhouses. Crossbreeding new varieties needs difficult pollination (授粉) efforts, and most of all time.
