PART. 03
Project 1: In groups, choose one festival in China, research it, and then give a presentation to the class. Use the example outline below to help you.
Time: 13-15 April (the Dai New Year)
Place: Xishuangbanna Dai Autonomous Prefecture, Yunnan Province
Minority Group: The Dai People
Festival activities: Splashing and spraying water on each other, dragon boat races, floating lanterns
Local festival food: ghost chicken, lemongrass grilled fish, pineapple purple rice

THE LABA FESTIVAL AND LABA PORRIDGE
The Laba Festival usually occurs about a month before the Chinese Spring Festival. The festival’s traditional food is Laba porridge.
15 Chinese dates
5 peeled longan fruit
3 walnuts
1/2 cup of sticky rice
1/4 cup of millet
1/4 cup of peanuts
1/4 cup of red beans
1/4 cup of mung beans
1/4 cup of raisins
Possible ingredients and steps:
Project 2: In groups, collect some festival food recipes. If possible, learn to cook the food at home and then make a poster with pictures for the class. Use the example below to help you.
the steps of making Laba porridge:
Turn off the heat and then wait for 10 minutes before serving the porridge.
Wash the rice, millet, peanuts, red beans, and mung beans, and soak them in 2 cups of water overnight.
Put these ingredients and the dates into a pot. Pour in 6 cups of water, and bring the pot to a boil before simmering for one and a half hours over low heat.
Wash the raisins, walnuts, and longan fruit, and then put them into the pot with some sugar before simmering for another 30 minutes.
5 cups of sticky rice
2.5 cups of fresh sweet jujubes (red dates)
Beijing-style Zongzi for the Dragon Boat Festival
Sample
The Dragon Boat Festival occurs on the fifth day of the fifth lunar month every year, in late May or early June. The festival’s traditional food is zongzi.
Possible Ingredients and Steps:
50 reed leaves

Soak the rice for two hours
Take one or two leaves together and make a funnel shape with them.
Put in one large spoon full of sticky rice, then add two or three jujubes. Cover with another large spoon full of rice.
Roll the leaves around the rice until it looks like a triangular packet. Tie it together with a string.
Put the zongzi in a pressure cooker and cook for 1.5 hours.

The Lantern Festival
The Lantern Festival is one of the most important traditional festivals in China. The custom of joyfully celebrating the Lantern Festival began in ancient times and still has great influence on Chinese people today.

Tangyuan
The trademark food of the Lantern Festival is called yuanxiao/tangyuan. They are glutinous rice dumplings with sweet fillings made of syrup, red bean paste, black sesame paste or more. They can be steamed or fried, but usually boiled and served in hot water.
Lantern riddles
Lantern riddles are riddles that were written on the lanterns that are displayed during the Chinese Lantern Festival or Chinese Mid-Autumn Festival and so on. The full name of Lantern Riddles is “riddles written on lanterns”.

Lanterns are the most notable part of the festival. People would gather in their yards and give offerings. Throughout history, countless variations of lanterns have been created.
Stilts
Chinese stilt performances are an ancient act. They stem from Chinese opera and the performers sing and dance while on stilts. Depending on their character, they have different costumes and heights.

Lion dance
The lion is well designed, with movable eyes and mouths. Sometimes, the lion will open its mouth and demand food and red pockets. Other times, they roll around and play like oversized kittens.
Dragon dance
Dragon dance has a history almost as long as Chinese culture itself. The performers create impressive formations to the beat of Chinese drums and cymbals. Dragon is an ancient symbol, which can pray for rain and eliminate evil.

The Lantern Festival takes place on the fifteenth day of the first month of the lunar year. During this time, lanterns will be hung throughout the city, creating a festive atmosphere. Many of these lanterns will have riddles written on them. People also eat yuanxiao or tangyuan, as these symbolise reunion, harmony, and happiness. In the past, the festival was known as Chinese Valentine’s Day, and so in ancient times poets wrote poems about the festival telling stories of young lovers.
