Food and music-they both nourish and sustain us in different ways as powerful accesses of heart and soul, migration and memory, lineage and legacy. In order to better understand this meaning, a few months ago I talked to López-Alt about the tradition of food and music and how it gets handed down through generations, evolving as it goes.
López-Alt's life combines food and music. He's known as a chef,best-selling food writer, and podcast host, but he grew up as a musician. He started violin lessons at age 4,and was still an active music player. He recently launched a project called Tasting Notes,featuring a wealth of live music, cooking demonstrations and conversations about the creative process in both fields.
López-Alt's cooking career is based largely on his remarkable ability to explain and teach the techniques of cooking to lots of home chefs and food lovers. "I think that cooking technique is simply a tool. We need to use the tool to express what's in our hearts and to share that expression with others when we make food and when we make music,” López-Alt said.
His passions for food and music have brought him back to an exploration of the sounds and flavors that shaped his life, from the boundless cultural diversity of his own childhood to the traditional recipes he ate in his life.
"We reflect on the enormous power of both food and music to connect us across cultures,across continents. In a study using the California Current as a case study, researchers found that upwelling regions significantly intensify ocean acidification(酸化). Upwelling occurs when deeper ocean layers, which are nutrient-rich and naturally acidic due to the microbial breakdown of sinking organic material that releases CO2, move upward toward the shore. When these acidic deep waters rise to the surface, they interact with additional atmospheric CO2, causing even greater acidity.
To examine how acidity has evolved over time, the researchers analyzed historic coral samples to reconstruct changes in coastal acidity over the 20th century. The team then used a regional ocean model to project 21st-century changes. Their findings show that upwelling zones experience acidification rates that surpass those “expected" from atmospheric CO2alone. The key factor is that the upwelled water is already acidic, and human-caused CO2increases further intensifies this effect.
Dr. Hana Jurikova, one of the study's co-authors, Senior Research Fellow in the School of Earth and Environmental Science, said,“Predicting how upwelling systems will respond to climate change is highly complex, as human-caused influences interact with natural sources of ocean acidlification. Our research shows that such interactions can enlarge environmental change in the California Current System, highlighting the need for similar studies in other regions to better anticipate future change.”
The California Current is only one example of a much broader pattern. Other major upwelling systems include the Humboldt Current off Peru, the Benguela Current and the Canary Current along the west coast of Africa. Each of these regions may experience a similar increase of acidificationas CO2 levels continue to rise.
Another co-author Dr. James Rae, Reader in the School of Earth and Environmental Science,said,“The ocean becoming more acidic poses major risks to ocean ecosystems and the communities and economies they support. The solutions we now have for climate change, like electric vehicles, also fix ocean acidification, so it's critical that we stand up for them.”

Our five senses flood us with environmental input 24/7. One way our brain makes sense of this abundance of information is by combining information from two or more senses. This sensory integration also causes us to associate higher temperatures with warmer colors, lower sound pitches with less elevated positions, and colors with the flavor of particular foods-for example, the taste of oranges with the color of the same name. Now, a study in Frontiers in Psychology has shown experimentally that such unconscious “crossmodal” associations with our sense of smell can affect our perception of colors.
Ward and colleagues tested for the existence and strength of odor-color associations in 24adult women and men between 20 and 57 years of age. All ambient odors in the isolation room were purged with an air purifier for four minutes. Then one of six odors-chosen at random from caramel(焦糖),cherry,coffee, lemon, and peppermint, plus odorless water as a control-was broadcast into the room with an ultrasonic diffuser for five minutes.
Participants were presented with a screen that showed them a square filled with a random color and were invited to manually adjust two sliders-one for yellow to blue, and another for green to red-to change its color to neutral grey. After the final choice was recorded, the procedure was repeated until all odors had been presented five times.
The results showed that participants had a weak but significant tendency to adjust one or both of the sliders too far away from neutral grey. For example, when presented with the odor of coffee, they wrongly perceived grey to be more of a red-brown color than true neutral grey. Likewise, when presented with the odor of caramel, they wrongly perceived a color enriched in blue as grey. The presence of the smell thus distorted the participants' color perception in a predictable manner.
The researchers emphasize the need to investigate how far-reaching such crossmodal associations between odors and colors are. "We need to know the degree to which odors influence color perception. For example, is the effect shown here still present for less commonly encountered odors ” said Ward.
