Step 1|
HEALTHY EATING
There is much debate nowadays as to what makes up a healthy
diet. For example, scientists have insisted for years that a big enemy of
health is fatty food. However, there is increasing evidence that the real
driver of poor health is not so much fatty food, as it is sugar.Heart disease
is the number one killer of Americans.[1]And in America,
people who receive 25% of their daily calories or more through sugar are
twice as likely to die from heart disease than people who receive less than
10% a day (Journal of the American Medical Association, 2014).This
is true regardless of how healthy the rest of their diet might be.Put more
simply, while people continue to argue over whether or not fatty food is
dangerous, we already know that sugar is a killer.
Much of this extra sugar comes from sweets and sweet drinks. The
average American gets 1/3 of his or her sugar through sweet drinks
alone.[2]The American Heart Association recommends that we limit
ourselves to less than 100-150 calories a day from sugar, which is less
than what is usually contained in one can of sweet drink or in a single
candy bar. In other words, if you want to be healthy, you have to cut
down on desserts, and cut out sweet drinks altogether.
Beyond this, you can keep healthy by consuming different
categories of fresh foods, especially fruit and vegetables, which are full
of vitamins and fibre, rather than processed foods.Processed foods often
contain less nutrition, and have higher quantities of sugar, salt, and fat
than fresh ingredients.Besides this, it is also important to have some
meat, beans, or dairy products in your diet, as they provide the
necessary protein for strong bones and muscle growth. As with everything
in life, moderation is key.The ideal diet is a balanced one, without too
much or too little of any one thing.
Finally, a fundamental key to healthy eating is to eat slowly. It takes
about twenty minutes from the time you start eating for your brain to tell
your body that you are full.[3]What this means is that people who chew too
quickly end up eating too much food because they still feel hungry. Eating
slowly also allows your body to digest your food better, and will allow
you to enjoy your food more.In addition, studies show that consistent
eating habits, for example, taking three meals a day at the same time
each day, are better for our health. It is also better to eat a modest amount
of food each time, rather than to eat a lot in one meal, and then a little
in the next.
There is no one trick to healthy eating.Rather, healthy eating starts
with having a healthy attitude towards food. One question you can ask
yourself is,“Do I eat to live, or live to eat?” If you are using food
mostly for nutrition, then you are on the right track with your
diet. However, if food has become the centre of your life, you might be
on the road to bad health. It is up to you to decide how you want to live,
and to make the right decisions about your diet.
Step 2|
  首段用了for example、 however、 as等词从不同的观点入手,到
  第四段使用了fundamental、 slowly、 end up、 better、 modest等
  第五段使用了starts with、 then、 however等词来说明健康的饮食

It was a snowy day during the spring

weather, it was the only restaurant that remained open.
The restaurant has a long history in Hong Kong. Its owners, the
couple, Peter and Michelle, have been running the restaurant since
2007.
“Things have changed a lot in the past 30 years,” Peter
said.“Chinese students 20 years ago thought that a 70-cent bowl of rice was
too expensive, but now a $20 meal is acceptable.” He also said that the
new generation of Chinese students engaged with other students, bringing
all their non-Chinese friends to visit the restaurant.
Peter takes great pride in his own cooking. He was curious about how
the food was made and why particular foods or sauces had specific
tastes. He chose to serve mainly Guangdong and Sichuan food at the
restaurant, featuring the family-style Chinese dim sum or hot pot.
When I asked whether he would modify (调整) the taste of the
dishes to suit the taste of most Americans, Peter said, “We are not like
those American Chinese restaurants. We provide the genuine Chinese taste
to our customers, and they will love it because it is delicious, and their
taste will suit the taste of our dishes, not the other way around.”
“If I hear complaints from my customers, I will be so upset that I
can’t fall asleep at night,” he said.“Luckily most of my favorite dishes
received wide acclaim (赞扬) from my customers and it takes more than
one person’s effort.”
He compares himself with the craftsmen in China who are proud of
preserving ancient Chinese art and whose motivation is only on people’s
enjoyment of their work and thought.
Such a spirit of craftsmanship has been remarkable and greatly valued
in the past. The craftsman’s spirit with perfection, precision,
concentration, and patience remains in Peter and his cooking.

Everyone loves ice cream. But Ecuadorians, particularly in Andean
cities, are convinced they love it more there than anywhere else. There are
art shows made about it, no celebration is considered complete without
it, and it’s everywhere — even early on a weekday morning.
“I eat ice cream every single day,” says Javier Lasluisa, a chef in
Quito.“It’s an off day if I don’t at least taste it.” His father and grandfather
were both “ice cream men”, he says, making and selling the treat. And
he and his wife recently started developing recipes for their own ice cream
brand. He says it may not be daily food for all Ecuadorians, but it’s a key
part at any special event or festival in the Andean zone of the nation.“We
are a country that values our traditions, and ice cream is a part of that,”
he says.
Local legend has it that Angél Lozado’s great-great-great-great
grandmother Rosalia Su rez “invented” the special style of ice cream,
“helado de paila”, in Ecuador.Mr Lozado carries on the tradition by
running Helados de Paila Fifth Generation Rosalia Su rez.Five
generations later, he says that he has a lot of extended family members
running their own ice cream operations, big and small. And although he
has moved toward a more industrialized approach to ice cream
production, he says he still rents his services making the copper-pot (铜
锅的) traditional type for weddings and parties.
“One can function without ice cream, but a celebration doesn’t feel
complete without it,” Mr Lozado says.“The tradition of eating ice cream
is kept alive in many ways by making it the old-fashioned way.”
Martina Mio Pérez, an Ecuadorian visual artist and cook, has
organized several interactive art projects that revolve around (围绕) ice
cream, taste, and memory. The idea was inspired, in part, by
memories of a childhood birthday party and how she can feel transported
back to that moment and her mother’s home-made ice cream when eating
lemon-flavored sweets.“Ice cream is a good way to symbolize memory,”
she says.“Memory is never full; it’s always incomplete.Frozen in time
until it melts away (融化).”
