People care about authenticity because food traditions are closely linked to identity,
particularly for migrant communities. Sociologist and professor of food studies, Krishnendu Ray, explains that home cooking is often the last way that communities can show their identity. British celebrity chef Jamie Oliver was accused of trying to take advantage of positive feelings about

However, food consultant Sara Kay asks whether there are problems with the idea of
authenticity. She stresses that these ideas often come from the expectations that majority cultures have about minority cultures and their food. These can be restricting—restauranteurs have

Pomelo(a kind of fruit) has a thick peel that is typically thrown away, contributing to significant food waste. In a recent study, researchers at the University of Illinois looked into methods to repurpose it to develop a device capable of powering small electronic products.
The pomelo peel has a thin outer layer and a thick, soft inner layer. “Some people have
used pomelo peels to extract mixtures for essential oils,” the researchers said, “but we wanted to
take advantage of the structure of the peel so as to upcycle it into higher-value products.” They cut it into smaller pieces and freeze-dried it to maintain its unique three-dimensional porous (多孔的) architecture. By examining its chemical composition and mechanical properties, the research team engineered a device that transforms mechanical energy into electricity.
The device is contact electrified, which may sound complex, but is actually simple. When we touch a sweater, especially in the winter, sometimes we feel a shock. The basic mechanism is contact electrification, or rubbing-electrification (摩擦起电). When two materials are rubbed
against each other, electricity can form due to the transfer of charges between them.
The researchers used the pomelo peel and a plastic film as two rubbing-electric layers that are brought into contact when external force is present. They attached an electrode to each of these layers to judge how well the resulting device could turn external mechanical energy into
electricity. By simply tapping the pomelo-peel-based rubbing-electric device with a finger, they
could light up about 20 LEDs. They also showed that a sports watch can be powered only by these mechanical forces, without the need of external electricity.
This work has strong potential to transform otherwise wasted energy into useful electricity; it could contribute significantly to long-term sustainability. Yi-Cheng Wang, a professor of
College of Illinois, said, “We also found that, thanks to the pomelo peel’s naturally porous
structure, rubbing-electric devices based on it can be highly sensitive to force and force frequency. Therefore, we got the idea of developing sensing devices that can be attached to the human body for biomechanical monitoring.”
